It’s easy to cook and delicious to eat this curried chicken soup. Nobody I’ve ever made it for hasn’t enjoyed it. Serve alongside warm pita bread.

Ingredients
- 1 pound frozen chopped spinach, thawed
- 2 cups water
- 4 teaspoons chicken bouillon granules
- ½ cup chopped onion
- ¼ teaspoon garlic powder
- ¼ cup butter
- ¼ cup all-purpose flour
- 3 cups half-and-half
- salt and pepper to taste
Instructions
- Place spinach, water, bouillon, onion, and garlic powder in a large pot over medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer until onion is tender.
- Meanwhile, melt the butter in a small saucepan and whisk in the flour until smooth. Cook for 2 minutes. Slowly stir in half-and-half; mix until smooth. Pour the cream mixture into the spinach soup, and simmer until thickened, about 10 minutes. Season to taste with salt and pepper.

I pretty much followed the recipe except I used fresh spinach and red onion because that’s what I had on hand. It turned out awesome!!
This is GREAT!!! I bought a bag of spinach from Costco to make Bacon Mushroom Spinach Pasta & have sooo much spinach left that I needed to find some spinach recipes. The reviews on this and the simple ingredients made me want to try it and I’m so glad I did. Hubby said he didn’t want to wait for me to make it so he ate the leftover BMS pasta. I gave him a little bowl to taste since he’d already finished his dinner, and he really liked it too. Thank you for sharing this delicious recipe.
I made this exactly as written, tasted it, added a touch more salt and boullion but still didn’t care for it. One picture looked more brothy and I guess that’s what I was hoping for. Just nothing great here for me so won’t be making it again.

I followed other reviewers and sauteed the garlic and onion, pureed the spinach mixture after boiling, and added cayenne pepper and celery salt for taste. With the extra additions, it was delicious and flavorful. In my husband’s words, “better than expected.”
It came out lovely and creamy, added a bit of Parmesan and used some fresh bread to eat it with as well.
Very good! Personal preference I used about 2T of sour cream instead of 1/2&1/2 and a single serving container of Chobani vanilla & cinnamon Greek yogurt. And a bit of Mrs. Dash for added flavor. I also added a sweet potato. Puréed all after cooking, so yummy!
this turned out great! I subbed 1/2 of the spinach with kale as I have so much of this still left from my garden. Garnished with shredded cheese. yum!
I made this a few weeks ago but I accidently used mustard greens instead of the spinach. It was delicious and I will be making this again but will use the spinach this time. I could not believe how good this was because I don’t like spinach or mustard greens. Looks like you could use any greens in this and it will turn out great. I also used Chicken Broth instead of the water. I made this again tonight 4/16/19 using the spinach and it was delicious. Can’t stop bragging on it.
I added heavy whipping cream tomatoes and Italian sausage, seasoning, i added Mexican oregano whole garlic and salt and pep.
I didn’t have any half and half so I made it with milk instead. I also used 2 cloves of garlic chopped and chicken broth instead of water. I pureed it enough so that the pieces of spinach were smaller, but not smooth.
This was great! Used fresh spinach instead of frozen, was excellent.
I changed it a lot by sauteing the onion and garlic in olive oil 1st, 2nd add water and one grated potato(for thickener)Puree in a blender and return to pot. 3rd use 1% Milk instead of 1/2 and 1/2. This cuts the saturated fat and calories immensely and will help your healthy lifestyle. Enjoy and live long!
Swapped out for vegetable stock since we don’t eat meat. Very versatile and cheap to make.
I love this recipe! I added some cherry tomatoes to this just for a little sweetness.
Used fresh spinach(more than called for)and 2% milk, accidentally added lots more garlic, and added hot sauce. Very good. Next time I’ll try fresh garlic.
Wow really simple to make and delicious
Loved it!! This is perfect as written, only thing I changed was melted in a 1/4 cup of shredded cheddar, and a dash of white pepper into the flour and butter cream sauce. Just my preference for most of my creamy soups. It added just the right zing to an otherwise great recipe. Thanks!!
