Delicious portabello mushroom cap recipe. I started experimenting with my own invention since I couldn’t find a mushroom recipe that I liked. Almost anything you think would make a delicious meat filling can be used to make them, including salad, shrimp, crab, and sausage.

Ingredients

  1. 3 cups peeled and cubed potatoes
  2. ½ cup chopped celery
  3. ½ cup chopped onion
  4. 1 cup chicken stock
  5. 1 teaspoon dried parsley
  6. ½ teaspoon salt
  7. 1 pinch ground black pepper
  8. 2 teaspoons all-purpose flour
  9. 1 ½ cups milk
  10. ½ (8 ounce) package cream cheese
  11. 1 cup chopped ham

Instructions

  1. Place potatoes, celery, onion, chicken stock, and parsley into a slow cooker. Season with salt and black pepper. Set cooker on High, cover, and simmer until vegetables are tender, about 2 hours.
  2. Whisk flour with milk in a bowl until smooth. Pour into slow cooker and stir until thickened. Cook on High for 2 more hours.
  3. Mash potatoes in the slow cooker to your desired thickness and consistency; stir in cream cheese and cooked ham. Simmer soup until cream cheese has melted, soup is thick and creamy, and ham is heated through, 30 minutes to 1 hour.

My adult children really liked it. Did not put the onions in as one of the daughters does not like onion. I used onion salt. Will make it again!

This hit the spot. I lessened the ingredients for my small crock. Zapped the potatoes for a few minutes in the microwave before dicing. I used a frozen mix of diced carrots, celery and onions. Instead of flour, I added a few shakes of instant mashed potatoes to the milk before adding. Didn’t have just parsley, so subbed for Italian seasoning. Used half the amount of cream cheese and added finely diced ham. I got three good sized bowls and think it was definitely better the second (and third) day. Didn’t have any green onions, so topped with chives. A keeper!

This was Excellent! I didn’t have Ham, so I used 1 can of Spam, cubed & “crisped” up in a skillet, before I added it to the soup – YUM!

Found this average, rather bland. We kept adding salt but not much help.I did double the recipe. Bacon, green onions and cheese on top helped. Will keep looking for a better crockpot recipe.

This was delicious and so easy to make. The cream cheese makes it rich. I used LOW setting and let it cook all day. Next time I will skip the salt as there was plenty in the ham.

this time I added a can of green beans to substitute the lack of potatoes I had. was really good. neither took away from either. made green beans taste southern for some reason lol but still potato soup. Good soup.

I think this is a very good base recipe that’s fun to play with. I took some liberties to adapt it to our family’s tastes and for the slow cooker because I don’t have a lot of time during the week. This was easy and I made it all up during my lunch break working from home and it was ready for dinner. Omitted the celery, substituted a decent sprinkling of onion powder in place of the onions, substituted 1 1/2 cups of heavy cream instead of milk, and used a whole 32oz of chicken stock plus a teaspoon of roasted garlic Better Than Boullion. I also crisped up 4-5 slices of bacon sliced into small slices. Added everything to slow cooker and cooked on low for about 7 hours. Delicious! Family loved it.

We accidentally came across ANOTHER great soup while making this. As I started to break down my veggies in the VEGGIE STOCK (made ours vegetarian) …hubby taste tested it and loved the broth with the veggies (prior to the potatoes breaking down), esp the onion chunks, so much.. that he asked me to let him eat a BOWL OF THAT!! It was delicious! So the next time I made this soup, I stopped there. It was a huge pot and my family demolished it within two days!!

This is great. I added a tablespoon of butter, about 2 cloves of minced garlic, and a dash of Worcestershire sauce, just for kicks!

I started out making this to doubling the liquids used less parsley and did not mash the potatoes. My other half doesn’t like cream cheese so I waited to tell him after he finished his first bowl. He ate 2 more after that. Very good recipe. Thank you for sharing.
