Ingredients
- 1 ½ cups water
- 3 cubes chicken bouillon
- 1 (10 ounce) package frozen chopped spinach
- 3 tablespoons butter
- ¼ cup all-purpose flour
- 3 cups milk
- 1 tablespoon dried minced onion
- salt and pepper to taste
Instructions
- In a medium saucepan, combine water, bouillon, and spinach. Bring to a boil, and cook until spinach is tender.
- Melt butter in a large saucepan over medium heat. Stir in flour, and cook for 2 minutes. Gradually whisk in milk. Season with minced onion, salt, and pepper. Cook, stirring constantly, until thickened. Stir in spinach mixture.

This soup was excellent and ridiculously easy. I had everything measured out in advance and it came together is less than 15 minutes. My husband and I do not love spinach but both agreed this was excellent. We also both agreed that it tasted “cheesy” even though the recipe does not have cheese in it. I added red pepper flakes but only because I like some kick with my spinach. This one is a keeper and I’m already looking forward to making it again.
This soup is delicious! I made a few changes based on other reviews: I added some garlic powder (I always do), I subbed one of the cups of milk for a cup of heavy cream, and I used an immersion blender at the end. The flavor was wonderful and it was quick and easy to make.

This is a delicious soup! My family loves lots of flavor, so I used 4 bouillon cubes vs. 3, used a heaping tablespoon of the dried minced onion, and included a light shake of garlic powder as well. This was the second or third time I’ve made this and was unable to find the frozen chopped spinach. As a substitute, I used 16 oz. of fresh spinach with the stems pinched off, cooked with the recipe-specified amount of water and bouillon (cooked, covered, on High for 3 minutes); and used added to soup as recipe specified. Fabulous!

I realized too late that I was out of chicken bouillon so I subbed beef, only 2 cubes. Turned out great! Added some cayenne and fresh garlic and used fresh onion for the minced, then blended everything.
I used whipping cream instead of milk and I feel that it really increased the sweetness. I also added rainbow chard to the spinach.
Simple and delicious. I used fresh spinach that was starting to wilt and would be unattractive as a salad. Yay for soup!

Omg, this is so good! I love cream soups, and this is my fav now. Specially when you can’t eat any leafy green veggies, this is good way to obtain all the folic acids!
Very simple and delicious.. I made it without the onion and my daughter loved it… Also instead of bouillon, I poured in a little chicken broth in the water.
I loved this soup and I know my daughter will love it when she tries it too! I did follow what other reviewers did except I did use over a pound of fresh spinach and whatever I had left of celery in 2 cups of water. I would use 3 chic bouillon next time but add no salt or 2 chic bouillon cubes and little salt. The salts from the celery was enough so if yiu decide tonuse celery I would suggest to not use any salt. I made the rue as other reviewers suggested, with milk and heavy cream I used 2.5 cups 1% milk and half cup heavy cream. I sautéed onions and garlic in the butter then a stirred in flour and adding 1 cup at a time of the milk as I consistently whisked. I added sslt, pepper, cayenne pepper to taste….next time no salt. I mixed the rue in the spinach and broth aND then blended most of it. Turned out to be a beautiful color and very flavorful! This is a keeper of a soup recipe!
it was really yummy!! First time I tried spinach soup, had no idea it could taste so good. I followed the suggestion in the reviews. I didn’t have any chicken broth though, still it tasted really good. Would have loved if there was something to munch in it like maybe sauteed mashroom. Will try it again 🙂
