Ingredients
- 4 cups organic chicken broth
- 4 cups water
- ⅓ cup diced carrots
- ¾ teaspoon chicken soup base (such as Better than Bouillon®)
- ¼ teaspoon dried marjoram
- ⅛ teaspoon dried thyme
- ⅛ teaspoon onion powder
- ¾ cup ditalini pasta
- ½ cup chopped cooked chicken
- 1 teaspoon lemon juice, or to taste
Instructions
- Bring broth, water, carrots, soup base, marjoram, thyme, and onion powder to a boil in a large pot. Reduce heat and simmer for 15 minutes.
- Add pasta and return to a boil. Boil for 15 minutes. Turn heat off and stir in chicken and lemon juice.
- I use pasta rings which are similar to ditalini; they can be found online.

I had to practice a lot of restraint on this recipe. I wanted to alter but I had to remind myself; this is a copycat recipe! I am so glad I did because on my first bite, I was transported back to my youth! Felt 7 again, having a bowl of this to warm up after an afternoon playing in the snow! ☺️ This is an AMAZING take on Campbells chicken and rings! Followed exactly except i used the skinnier carrots that come in most carrot-packs and thinly sliced 2/3c. I also finely diced (nearly minced) 1/4c onion. I was fortunate to actually have ring pasta on hand (vs ditalini) and used rotisserie chicken. The tsp of lemon juice is the tangy secret! Is this the best chicken noodle soup recipe? No but it is a 5 STAR – and better version – of the canned kind. Thank you so much SL Nicole for all your efforts in perfecting and then posting this! Will make again!
