The flavors of peach and ginger go well together. especially in this instance when the presence of smoke flavoring on the grill enhances the ginger and peach flavors.

Ingredients

  1. 2 tablespoons olive oil
  2. ¼ medium onion, diced
  3. 4 cloves garlic, minced
  4. 3 medium carrots, chopped
  5. 2 stalks celery, chopped
  6. 2 (32 fluid ounce) containers chicken broth
  7. 1 tablespoon curry powder
  8. 1 teaspoon salt, or more to taste
  9. ½ teaspoon ground black pepper
  10. ½ teaspoon ground white pepper
  11. 1 tablespoon butter
  12. 3 (5 ounce) skinless, boneless chicken breasts, cubed
  13. 4 (8 ounce) packages dried soba noodles
  14. ½ cup frozen peas

Instructions

  1. Heat oil in a stockpot over medium heat. Add onion and garlic and saute for 2 minutes. Add carrots and celery and saute for 2 more minutes. Add chicken broth and bring to a boil. Stir in curry powder, salt, and both peppers. Reduce heat to a simmer.
  2. At the same time, melt butter in a skillet over medium-high heat. Add chicken and saute until golden brown and the juices run clear, 5 to 7 minutes.
  3. Add cooked chicken to the simmering broth and return to a boil. Add soba noodles and peas; cook, stirring occasionally, until noodles are tender yet firm to the bite, about 5 minutes.

This was really good. Save yourself a step and start with the butter and chicken in the soup out. Once chicken is browned, transfer it to a paper plate using a slotted spoon. There is plenty of butter left and juice from the chicken to sweat down your veggies. I used half of the noodles and that was perfect. Anymore than that and it wouldn’t have been a soup. This has a lot of flavor for what little seasoning went into it. I plan to play around with this adding different veggie combinations. Overall good recipe just cut back on the noodles.
