I love chocolate mousse, but all I wanted was a very delicious chocolate pie. Does anyone not? In order to create the ideal chocolate mousse pie with chocolate whipped cream topping, I started with a base recipe but ended up adding my own ingredients and amounts. Add some freshly cut raspberries and some finely chopped chocolate as a garnish.

Ingredients

  1. 1 cooked rotisserie chicken, shredded
  2. 32 ounces chicken broth
  3. 16 ounces restaurant-style salsa (such as Pace®)
  4. 1 (15.25 ounce) can sweet corn, drained
  5. 1 (15 ounce) can black beans, rinsed and drained
  6. 1 (11 ounce) can southwest-style corn, drained
  7. 1 (10.75 ounce) can condensed cream of chicken soup
  8. 1 (4 ounce) can mild, fire-roasted diced green chile peppers
  9. 2 ½ teaspoons ground cumin
  10. 1 teaspoon chili powder
  11. ½ teaspoon garlic powder
  12. ¼ teaspoon salt

Instructions

  1. Combine shredded chicken meat, chicken broth, salsa, sweet corn, black beans, southwest-style corn, condensed soup, diced green chiles, cumin, chili powder, garlic powder, and salt together in a large pot; bring to a boil.
  2. Reduce heat to medium-low and simmer until heated through and flavors have blended, about 20 minutes.

I didn’t have the canned corn so I used frozen corn. Other than that, I followed the recipe exactly. What a delicious soup and it is so easy to throw together! Just a little smoky heat so that those of us with sensitive taste buds don’t get turned off. I made some corn muffins to serve with it. This soup is going into my meal rotation.

Amazing with easy to customize to your taste and what you have on hand. Used a 1 1/2 cup frozen corn, two cans black beans, had chipotle in Adobe in fridge so added two chopped finely, had 1/8 cup chopped jalapeños, cooked sweet potato chopped, and one can Rotel. Didn’t have chili peppers, or Mexican corn. Added a chopped yellow pepper. So 5 stars for it being a great soup.

We haven’t even sat down to this and the early testings are delicious. I get annoyed when people review even though they’ve changed the recipe so I was sure to review this before I tried a few things I thought might work. Again, delicious. My hubby is a soup man and he will love it! So…I added an extra can of black beans as well. Didn’t have canned corn so put in a bag of frozen corn. For color I threw in a little jar of chopped pimentos. I saw someone’s suggestion for making corn bread to go with and plan to do that.

I made this recipe for a group of ladies I was having over after golf. Made ahead and warmed up to serve. Everyone loved it! The only changes I made were, I didn’t add any regular corn, and because one of my friends had an allergy to onions I did not use the pace picante sauce, I substituted 1 /1/2 cans of fire roasted organic tomatoes (28 oz can).

My family loved this! I made very few changes to this recipe. Because some other reviewers said the soup was a bit “corn-heavy”, I only used one can of corn. Instead of Southwest corn, I used a can of fire-roasted corn I had on-hand. I added two cans of black beans, because we love black beans, and one can really didn’t look like enough for the amount of soup. I also sprinkled in about a half teaspoon or so of chipotle powder. I don’t usually care for recipes that call for “cream of …” soups, but I added the cream of chicken to the pot and it really helped to thicken it up, so don’t leave it out! I paired the soup with “Golden Sweet Cornbread” from this site. Everyone topped their soup with cheese, sour cream, and fresh cilantro. It was an excellent meal! This recipe is a keeper for me, thanks for sharing it! Update: I’ve probably made this about 4 times now, it’s always a hit! Last time I added a few squirts of Sriracha sauce instead of Chipotle powder, it’s great either way, but I think we all prefer the Sriracha.

This was great! I thought this was going to be too spicy, but it wasn’t! I did add an extra can of black beans, can of chili beans, and only one can of corn like the other reviews recommended. Very tasty. Very satisfying on a cold winter night. Thanks!
