This baked potato soup dish is simple to make and delicious. Even children enjoy it! Potatoes, bacon, green onions, cheese, and sour cream are all present. Delicious and rich.

Ingredients

  1. 4 baking potatoes
  2. ⅔ cup butter
  3. ⅔ cup all-purpose flour
  4. 6 cups milk
  5. 1 cup chopped green onions
  6. ¾ teaspoon salt
  7. ½ teaspoon ground black pepper
  8. 12 slices cooked bacon, crumbled
  9. 5 ounces shredded Cheddar cheese
  10. 1 (8 ounce) container sour cream

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Bake potatoes in preheated oven for 1 hour. Scoop out the inside of potatoes and set aside. Reserve skins for another recipe or discard.
  3. Melt butter in a large skillet over medium-low heat. Stir in flour to make a roux. Cook for about 1 minute, stirring continuously. Gradually stir in milk; increase heat to medium and continue to stir until thickened.
  4. Add potatoes, green onions, salt, ground black pepper, bacon, and cheese. Stir well and continue to cook for about 15 minutes, allowing the flavors to blend. Stir in sour cream until well blended. Serve immediately.

As suggested by others I used chicken broth to deglaze the pan. Also, only used a fourth of a cup of sour cream and just 4 cups of milk, garnished with the bacon and onions for a wonderful filling meal

I love this soup! The second time I made it (1/2 batch) I added 4 cloves of minced fresh garlic, used some bacon grease, and used about half pepper jack cheese. Next time I may add fresh roasted poblanos. The basic recipe is outstanding, but it’s a fun one to modify too.

I try to cook everything as healthy as I can, and it’s a major bonus when it doesn’t taste like I’ve left any of the good stuff out. I boiled my peeled potatoes and onions in water w/ chicken bullion, about 5 cups of water. I did use butter and flour as directed, but only 2 cups of 1% milk, 1/3 c fat free half and half, and the rest was the bullion water I used to boil the potatoes. I used Hormel precooked bacon which saved a few calories, and omitted sour cream and cheese. I planned to add some, but it was so good like this I decided not to.

Awesome and very few simple ingredients. The rue was simple to make. Make sure you do all your prep since it goes quickly once the rue is done. It was better than any other baked potato soup I’ve had in restaurants. Besides you can measure you salt intake.

No changes are needed, it’s DELICIOUS!! It’s really GOOD & quite thick… I microwaved the potatoes instead of baking, (to save time!) then peeled off the skin & cut into cubes…The second day, it needed to be ”thinned” out with milk, but it still had great flavor & it’s VERY FILLING!!! My husband had never had double baked potato soup before & he LOVED this… It’s great Comfort Food in these colder months!! Will make this more often!!

Super delicious. I made a few tweaks. 2 cups of chicken stock substituted for 2 of the cups of milk, used hatch chili infused bacon, added a half teaspoon of bacon grease to the roux. I also pealed and cubed the potatoes and boiled them in water for about 15 minutes and then combined all ingredients and let them cook at high on a crock pot for an hour.

This was delicious! I did make a few adjustments though nothing major. I put in 3 cups each of milk and half and half. And my crew doesn’t like “real” onions, so we used onion powder instead. It turned out fantastically, the kids who normally avoid leftovers were begging to take some to school the next day!
