One of those last-minute items I threw together one evening was this soup. It is incredibly easy to put together and just takes a few minutes.

Ingredients
- 2 (15 ounce) cans black beans, drained and rinsed
- 1 ½ cups vegetable broth
- 1 cup chunky salsa
- 1 teaspoon ground cumin
- 4 tablespoons sour cream
- 2 tablespoons thinly sliced green onion
Instructions
- In an electric food processor or blender, combine beans, broth, salsa, and cumin. Blend until fairly smooth.
- Heat the bean mixture in a saucepan over medium heat until thoroughly heated.
- Ladle soup into 4 individual bowls, and top each bowl with 1 tablespoon of the sour cream and 1/2 tablespoon green onion.

I have made this recipe many times (several times each month). It is easy to make and takes only a short amount of time. I use an immersion blender instead of a food processor. It is easier to clean the immersion blender.

I liked how quick and easy this is to make. It is a great meal with little to no effort. A truly “fast-food” for the home cook. My Blendtec even has a soup setting that heats the soup as it blends! I will make this again and again.

I made this recipe as written the first time and only changed one thing the second time. After blending the soup, I added 1 can of black beans, which made it heartier. I took it to a “Soup Party” and everyone wanted the recipe. I was very embarrassed that it was so easy to make and the guests were delighted that it was!

It was good. I couldn’t find my immersion blender so I just smashed everything as best as possible with my big spoon. Tasty soup!
Ha! I thought *I* created this and was searching for a way to submit *my* idea. Then I did a search and found this! I made nearly the same thing but like most, with some alterations. I used one can reduced-sodium black beans (not rinsed), one 14-oz can reduced sodium chicken broth, and one tub of refrigerated salsa (about 16 oz) along with a healthy dose of cumin. The salsa was “medium,” so a little too hot for me, but you’d never know the soup was low sodium because it was BIG on flavor. To give it a little body, I smashed some of the beans with a fork before adding them, but other than that, it all went into one sauce pot and just heated through. No prep because with salsa, all the chopping is done. Low-calorie, too. If I did the math right, the whole pot – about 3-4 servings – was 450 calories. A definite make-again choice.

This is a simple, easy to make recipe full of rich, bold flavors. I omitted the sour cream and topped it with shredded Mexican cheese, crushed tortilla chips and sliced avocado. I’m definitely adding this to my repertoire of recipes.
Reserved cup of beans to add after purée. Next time will reserve cup of beans, salsa and add a can of Rotel tomatoes with green chilies to add after purée.

I added 1/4 cup finely diced onion and only used 1/2 tea of cumin. Very fast and tasty!
I make this all the time for my spouse who is on a sodium restricted diet. I use no salt added beans, broth and low sodium salsa. She loves it and so do I.

Made this adding sautéed onions and garlic. Next time I will leave out the cumin. It’s too overpowering. Other than that surprisingly good and simple recipe
