Big Ed’s Cajun Shrimp Soup

Ingredients

  1. 1 tablespoon butter
  2. ½ cup chopped green bell pepper
  3. ¼ cup sliced green onions
  4. 1 clove garlic, minced
  5. 3 cups tomato-vegetable juice cocktail
  6. 1 (8 ounce) bottle clam juice
  7. ½ cup water
  8. ¼ teaspoon dried thyme
  9. ¼ teaspoon dried basil
  10. ¼ teaspoon red pepper flakes
  11. 1 bay leaf
  12. ½ teaspoon salt
  13. ½ cup uncooked long-grain white rice
  14. ¾ pound fresh shrimp, peeled and deveined
  15. hot pepper sauce to taste

Instructions

  1. Melt butter in a large pot over medium heat. Saute green bell pepper, onions, and garlic until tender. Stir in vegetable juice, clam juice, and water. Season with thyme, basil, red pepper, bay leaf, and salt. Bring to a boil, and stir in rice. Reduce heat, and cover. Simmer 15 minutes, until rice is tender.
  2. Stir in shrimp, and cook 5 minutes, or until shrimp are opaque. Remove the bay leaf, and season with hot sauce.

I made it according to the recipe just doubled the serving size. Yes, I’ve been cooking for many years and I know how to double the recipe. It was a bland and awful watery mess. An hour of tweaking later, using suggestions from others here, then additional tweaking, it was barely edible. I cannot believe all who rated this so good.

We absolutely loved it! Does need okra and corn, which I will be adding next time. I also plan to add some crab meat. My husband said it would be tasty with sausage. Overall it tastes awesome!!!

I added 1/4 tsp cajun seasoning and swapped an undrained can of chopped tomatoes for the water. Delicious!

Really excellent. My whole family loved this, especially my wife. I added a can of baby clams to the mix, which assured there would be seafood in every bite. The broth alone would make for a great soup.

Great soup. Was really not expecting this to be so delicious. One suggestion from a old shrimp boat captain friend of mine back in the ’70’s. Do not add the salt till you add the shrimp! Same goes for boiling shrimp (add salt last one minute of boiling) Salt to early and the shrimp can get mushy. Salt at the end and the shrimp will snap with flavor. I also used seafood stock in place of the water.

This is by far my favourite Allrecipes recipe (and I use a ton of them). If I could give more than five stars, I would. Only change – I use cauliflower rice – it’s healthier, fewer calories and doesn’t absorb all the liquid in subsequent days so it is better for leftovers or freezing.

I made it almost exactly stated, except I subbed a store bought pre-diced mirepoix for the veggies. Fast, easy, and really tasty! In future, I think I’ll make it with a light roux.

I did this in my Instant Pot. Sautéed veggies in IP, added all remaining ingredients except shrimp. cooked on Soup function, quick release of pressure, added shrimp and a couple of minutes on Sauté. Served with crusty French bread, a block of cheese, and fruit for dessert. Perfect weeknight meal!

Great soup! Although I did change a few things as well. I added a bit of smoked paprika, half tomato juice to half chicken broth (I think next time I’ll do half tomato juice and half water since it was quite salty), half and half red and green peppers, 1 left over chicken breast cut smallish, a can of creamed corn, siracha and a tbsp. of sugar to cut the acidity. Result, fantastic!

This hit the spot on a cold, rainy Sunday in NH. Notihing needs to be added to Big Ed’s description. The rating is for the recipe as written (wish most others would do the same). I will make it again; tweaks will be to start with the Trinity, green onions will be saved for the garnish. I will season the shrimp with Cajun seasoning and add a dash of Worcestershire …all personal tastes

Loooove this soup. I didn’t find clam juice at my grocery market but found fish stock and it came out great! I also added celery for additional Cajun flavor. Excellent!
