Ingredients

  1. ¼ cup lime juice
  2. ¼ cup water
  3. 1 tablespoon white sugar
  4. 1 Granny Smith apple, sliced into 1/16-inch thick rounds
  5. 1 red apple (such as Paula), sliced into 1/16-inch thick rounds
  6. fleur de sel (sea salt) to taste

Instructions

  1. Preheat oven to 170 degrees F (77 degrees C). Line two baking sheets with parchment paper and lightly oil the paper.
  2. Stir lime juice, water, and sugar in a bowl until sugar is dissolved. Soak apple slices in lime juice mixture to combine flavors, 2 to 5 minutes. Drain and discard liquid.
  3. Arrange apple slices in a single layer about 1/8-inch apart on prepared baking sheets. Sprinkle with Fleur de Sel.
  4. Bake apples in the preheated oven until dried and crisp, about 4 hours. Cool completely before carefully peeling from the parchment.
  5. Use a mandoline to slice the apples.

They were delicious! The lime juice gave them just enough extra flavor!

The sweetness of the apples intensifies as the apple slices bake, and although a cinnamon-sugar mixture is traditional on apple chips, I think the sea salt provides a fabulous contrast to the sweetness. I baked these for four hours at 170 degrees F, and they weren’t even close to being done, so I bumped up the temperature to 225 for the fifth and final hour. These apple chips are divine, but in the future, I will try cooking them at 225, five hours is just too long.
