Ingredients
- 1 bunch kale
- 1 tablespoon extra-virgin olive oil, divided
- 1 tablespoon sherry vinegar
- 1 pinch sea salt, to taste
Instructions
- Preheat the oven to 300 degrees F (150 degrees C).
- Cut away inner ribs from each kale leaf and discard; tear leaves into pieces of uniform size, about the size of a small potato chip. Wash torn kale pieces and spin dry in a salad spinner or dry with paper towels until very dry.
- Place kale pieces into a large resealable bag. Add about 1/2 of the olive oil; squeeze out air and seal, then massage the bag so oil gets distributed evenly on kale pieces. Add remaining oil and massage the bag more, until all kale pieces are evenly coated with oil. Sprinkle vinegar over the kale leaves, reseal the bag and shake well. Spread the leaves evenly onto a baking sheet.
- Bake in the preheated oven until mostly crisp, about 35 minutes. Season with salt and serve immediately.

Love these. I did mine in the air fryer for 6 minutes. I dried the kale then a spray of olive oil and a sprinkle of the 5 chinese spices and a small sprinkle of light fine brown sugar and sea salt….so so nice.

The time and temperature seemed adequate to make a nice crispy chip but I thought the flavor was flat. I think it needed more seasoning.
Thanks for the recommendation in the notes to put it on a cookie sheet in the oven. I used balsamic vinegar rather than Sherry vinegar – which is deliciously the secret ingredient for our family. Delicious! thank you.
So I kinda just follow this recipe loosely but my kids love it and request it and therefore I love it! I leave out the vinegar and just massage oil and salt into the washed, deveined and ripped up kale then bake per the recipe.
Added Garlic power, had white wine vinegar.
Added a little bit of creole seasoning and just used the olive oil pam spray. Super easy and yummy!

I really like this. Be sure to use larger pieces of kale so it bakes right. I used balsamic vinegar and avocado oil, sprinkled with slap ya mama. excellent. baked about 260° for about 10-15 minutes. watch them!!! Experiment with cheeses, and different toppings. use sparingly.
I didn’t like it.
This is the second time I made them and I love it so much as the first time. So I lined a cookie sheet with waxed paper, then I washed the kale and tore it off the main stem into smaller pieces and placed each piece on the waxed paper. I then poured a little bit of Olive Oil in a small bowl or container ( use your own judgement on how much to pour) and dipped my pastry brush into the Olive Oil and then brushed each piece with with the Olive Oil. Then I lightly sprinkled some salt and some Lemon Pepper. I put into 300 degree over for 15 minutes. I took them out of the oven and enjoyed. We finished all of them.
They were easy and perfectly cooked!!
This is really good. Instead of baking in the oven, I used my food dehydrator.
After reading the reviews, I checked my chips after 15 minutes and they were overcooked.
This was my first time making Kale chips and they are really tasty! I followed this recipe with the addition of a teaspoon of soy sauce. I will try it next time without salt. A big hit in my family!
I recommend looking at other sites too. Different temps and times are used in some recipes. Some recommend baking on a cooling rack for improved circulation vs flipping them over halfway. Regardless, these DO NOT take the place of potato or corn chips. They taste like greens. That isn’t bad, but let’s not pretend these are something they CLEARLY are not. When one is making health choices, these are a great salty snack- as long as you are willing to invest the time for 10 minutes of snacking pleasure. On that (salt) note- I recommend using table sea salt. The small grain size will stick to your kale better.
First time having kale chips and they were fantastic. I agree that watching the time is crucial. Did 13 minutes in a convection oven and they may have been just a tad overdone. Will cut back to 10 minutes next time. Very tasty though.
I used balsamic vinegar, but probably not enough.. I think the flavour could have been more intense, if I had a more precise amount of kale given other than “1 bunch.” Kale can come in large bags, already prepared, or, taken straight out of the garden, as mine was. So a better description of the amount is needed.
