Cute “deviled” chicks may be seen popping out of their eggs in this recipe for deviled eggs. Put them on display in an egg cup or egg tray.

Ingredients
- 12 hard-boiled eggs, peeled
- 2 tablespoons mayonnaise
- 1 ½ tablespoons yellow mustard
- 1 dill pickle, finely chopped
- 1 tablespoon prepared horseradish, or to taste
- 1 teaspoon pickle juice
- salt and ground black pepper to taste
- 1 carrot, cut into rounds
- 12 slices canned black olives, or as needed
Instructions
- Slice through the top third of each egg, ensuring some of the yolk is included in the slice. Carefully remove the egg yolk from the bottom portion of the egg using a spoon and transfer to a bowl.
- Mix egg yolks with mayonnaise, mustard, pickle, horseradish, pickle juice, salt, and pepper. Fill a piping bag or a plastic bag with the egg yolk mixture. Snip off one corner if using a plastic bag. Pipe yolk mixture into the hollowed egg whites creating the chick, ensuring there is enough filling exposed at the top to add eyes and a beak.
- Slice small wedges out of carrot rounds to create 12 beaks. Add a beak to each chick.
- Slice olive pieces into small squares to be used as eyes. Add 2 eyes to each chick. Place the egg tops onto each chick so it looks like the chicks are peeking out of the eggs.
- Feel free to adjust the ingredients in the filling depending on taste or the desired consistency. We often like more pickle and horseradish.
- It’s easier to break up the yolk a bit so you can remove it without tearing the egg white.

I didn’t feel the need to add the horseradish, pickles, or pickle juice. – tasty without those ingredients. Fun and festive presentation! I found that I needed to add more mayonnaise in order to improve the consistency for piping (very easy to pipe!).

Super cute, though mine didn’t come out looking that good. But seriously one of the best deviled eggs recipes I’ve found anywhere. I did cut the skin off my dill pickles before mincing, as the skin gave an “off” texture to the mix. But the flavor is delicious, my whole family loves. We just make these for ourselves to enjoy as snacks (not cute, just normal deviled eggs).

The eggs were good and my daughter loved how cute they were. Next time, I will get rid of the excess pickle juice that came from chopping them up. It made the yolk a bit runny.
These little chicks were the talk of our Easter brunch. They were not only cute but tasty. The only change to the recipe we made was using capers for the eyes instead of olive pieces. We also took a small slice off the bottom so they would stand upright.
These were awesome. I omitted the horseradish only because I was taking them to my nieces and nephew. They are 9, 6 & 3. Wow…they LOVED them. They had 2 EACH – couldn’t believe it. I didn’t even get one lol They don’t transport well. Ours got mushy and looked funny but we strategically placed them to make them look like some were drunk and fell down. Was hilarious. We made a little bottle out of cucumber! We don’t like olives so used Pickles and we did not have dill so used sweet pickles and they were super yummy (from the bite I had before my family ate them all) Next time would do for people coming to my place so they don’t get mushy but they rock!
Great idea. I had my 8 and 16 year Grand Daughter’s help with this project. Took it to a family Easter brunch. My Grand Daughter’s renamed them Halloween chicks. They are a little harder to make then we thought, but they promised that we will do a better job next year. Grand Pa Jim
