Annie’s Fruit Salsa and Cinnamon Chips

This is my husband’s adaptation of the well-known Amatriciana meal from Rome, where he was raised. It calls for guanciale, which can be challenging to locate in the United States because it is cured swine jowl. We’ve found that salt pork is a great substitute even though some recipes ask for pancetta or bacon to be used in its stead (see Cook’s Note).

Ingredients

  1. 16 ounces strawberries, quartered
  2. 2 medium Golden Delicious apples – peeled, cored and diced
  3. 2 kiwis, peeled and diced
  4. 8 ounces raspberries
  5. 3 tablespoons fruit preserves, any flavor
  6. 2 tablespoons white sugar
  7. 1 tablespoon brown sugar
  8. 10 (10-inch) flour tortillas
  9. butter-flavored cooking spray
  10. 2 tablespoons cinnamon sugar

Instructions

  1. Make the salsa: Mix strawberries, apples, kiwis, raspberries, fruit preserves, white sugar, and brown sugar together in a large bowl until thoroughly combined. Cover and chill in the refrigerator while you make the cinnamon chips.
  2. Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.
  3. Make the chips: Stack tortillas on a work surface; use a sharp knife to cut through the stack four times making eight wedges in each tortilla. Arrange wedges in a single layer on the prepared baking sheets. Spray wedges with cooking spray, sprinkle with desired amount of cinnamon sugar, then spray again.
  4. Bake in the preheated oven until golden and crispy, 8 to 10 minutes. Allow to cool approximately 15 minutes on the baking sheets, then serve with chilled fruit salsa.

I very rarely rate any recipes but this one I have made several times and have had rave reviews every time. I fixed the fruit exactly like the recipe but no one was impressed with the homemade chips so I don’t make them anymore. This is excellent alone, over angel food cake, or with Cool Whip on top. Eliminating the chips makes this a very simple and quick but beautiful fruit dish that everyone loves. I fix it often and can vary the fruits and/or the preserves flavor to make it taste a little different each time. Definitely a winner!

Made this numerous times & everyone always loves it. I leave out the sugar in the fruit and spray both sides of the tortillas then cut with a pizza cutter. I put a bowl under a strainer when placing all the cut fruit so it’s not too juicy & save the Joyce to make my kids fruit smoothies later! Bonus! My family & friends love this recipe so much! The first time I made this was for the childbirth class I attended for my last child right before she was born. It was a big hit. She just turned 17 years old a couple of days ago and I’m not sure how that happened! I’ve made it several times since then. The salsa is ok, very sweet. You may want to adjust sugar according to taste instead of following the recipe straight. The fruits used go alright together, but again, adjust them to what you really like. The real, consistent hit here are the chips! So simple, and yet people absolutely love them! Adults, kids, everyone loves these. Be sure to double the chips. I wasn’t thrilled with the idea of using a butter pan coating spray for the chips, but it works out perfectly. I’m sure using an olive oil or avocado oil (my fave) would work well too. Worth trying if the other bothers you too much. Just to be clear, I’ve always made this according to recipe. It’s always been delicious, but I do recommend being mindful of the sugar content if you don’t like things very sweet.

5 stars mostly due to cinnamon chips! Everyone from my almost 2 year old grandson to 88 year old mom loved them. I sprayed them with pam butter spray and baked them. I didn’t have strawberries so used blueberries instead. I didn’t add sugar but should have as the blueberries were tasteless. Next time I will use strawberries.

I have made this twice for different groups of people and each time everyone went wild over it. You can substitute fruits in season if you need to and it will be just as good. Just be sure all fruit is chopped into tiny pieces. I made it with unsalted butter not butter spray and more sugar than called for on the tortillas so I don’t even want to think about how fattening it was.
