S’mores Snack Mix

Molly thinks s’mores are the best! This is her campfire twist on the classic Midwestern sweet snack mix with loads of marshmallows, graham crackers and corn cereal tossed together with peanut butter and chocolate…and enough powdered sugar to keep the sugar farmers in business! It’s soooo good; she used to eat tons of it as a kid at soccer practice!

Ingredients

  1. 6 cups rice cereal, such as Chex
  2. 7 graham cracker sheets (about 4 ounces or 108 grams), broken into 1/2-inch pieces (about 2 cups)
  3. 3 cups powdered sugar
  4. 1/2 cup (1 stick) unsalted butter, cut into pieces
  5. 1/2 cup creamy peanut butter
  6. Three 4.4-ounce milk chocolate bars, very roughly chopped, divided
  7. 2 cups mini marshmallows
  8. 2 cups dehydrated marshmallows

Instructions

  1. Into a large mixing bowl, add the rice cereal and graham crackers. Set aside.
  2. Into a large food storage container with a lid, add the powdered sugar. Set aside.
  3. In a medium mixing bowl set over a saucepan of barely simmering water, add the butter and peanut butter. Melt, stirring frequently, until thoroughly incorporated. Add 6 ounces of the chocolate and melt, stirring until smooth, 2 to 3 minutes.
  4. Pour the chocolate-peanut butter mixture over the cereal and graham cracker mixture. Using a rubber spatula, gently fold the mixture into the chocolate until all the pieces are fully coated. Transfer the chocolate-coated mixture into the container with the powdered sugar and secure the lid. Shake the container to evenly coat the mixture with the sugar (you may need to use your hands or a large rubber spatula to fully combine).
  5. Add the mini marshmallows, dehydrated marshmallows and remaining chopped chocolate and shake to combine. Store in an airtight container at room temperature for up to 5 days.

Loved this, a real treat! We made this after seeing it on Molly’s show today and followed the recipe exactly except for the dehydrated marshmallows which we could not find.

This was ok. But by the second day, the marshmallows changed. The dehydrated ones got soft and chewy and the regular ones changed consistancy as well. I loved the chocolate peanut butter sauce. Next time I make them, I will leave out the marshmallows and use only half of the confectioners sugar.

This is absolutely bomb! I made this for my kiddo and her BFF when we had a sleepover! It was a total hit. Very tasty. If u like sweets…. this is extremely tasty. It’s also a good thing to let ur kids help u with too.

This was delicious!! My Mom and I cannot have peanut butter so we used Sunflower Butter and it was still very good. Next time, though, I will add more chopped chocolate to the cereal mixture (not the peanut butter / butter mixture). I felt it needed it.
