Purple Smoothie Pops

Ingredients

  1. 2 cups plain Greek yogurt
  2. 2 cups frozen blueberries
  3. 2 cups frozen mixed berries (or frozen strawberries)
  4. 1/4 cup honey
  5. 1 banana, peeled
  6. 1/4 head red cabbage
  7. 1 cup cranberry or grape juice (or any deep red/purple juice)

Instructions

  1. Add the yogurt, frozen berries, honey, banana and cabbage to a blender. Then pour in the juice and blend until smooth!
  2. Pour into ice-pop molds and stash them in the freezer until totally frozen. Remove and eat as required!

I have a grandson that has T1 Diabetes, I am always looking for recipes that I can make for him.  I would love to make these yummy looking freezer pops for him and his brothers, but I’m unsure of the carbs.  Is there a method to figuring out carbs?
