Ingredients
- 1 avocado, peeled, halved and pitted
- 1 frozen peeled banana, cut into 2-inch chunks
- 1 1/2 cups blueberries
- 1 cup coconut water
- 1 cup frozen chopped collard greens
- 1 cup frozen pineapple chunks
- 1 tablespoon freshly squeezed lime juice
- 1/2 teaspoon grated fresh ginger
Instructions
- Special equipment: a high-powered blender, optional
- In a carafe of a high-powered blender, combine the avocado, banana, blueberries, coconut water, collard greens, pineapple, lime juice and ginger. Blend until thick and creamy.

I made it as written first time.
Next few times I used half a small avocado and a quarter of a banana.
I like the texture half an avocado adds and I preferred less banana taste, as I feel a whole banana dominates the taste of the smoothie.
I’ve also played around with using tender baby spinach and baby kale.
The spinach is my preference, it’s not as jarring, adds a sweetness to the smoothie.
Obviously, you can change up the ingredients to your liking, as this provides an excellent starting base.
Also, I sometimes use frozen fruits or veggies for a frozen smoothie.

I made this smoothie recipe almost exactly, except I used fresh Kale, all my fruits were frozen and I did not have coconut water on hand so I just used plain water. It was delicious and my kids kids thought so too!! I will be making this again!
Valerie did not use collard greens and avocado when she made the smoothie, so if you are trying this recipe make it without those ingredients then maybe try it again with those ingredients. I have made smoothies with collards greens before and I recommend a fresh, tender leaves with a mild flavor versus the popular bagged variety. Make sure your bananas and pineapple (I used fresh) are ripe to get a natural, sweet flavor. Overall a good smoothie and I will try it again. Food Network, you should edit the recipe to match the recipe in the episode.
I made the smoothie as written (collard greens & avocado). This was my first time using coconut water and spices in my green smoothie recipes and found they improve the taste as well as provide health benefits. I’ve watched the show every week and find it fun to watch while encouraging me to try new cooking techniques & recipes. Thanks Food Network for adding Valerie’s #HomeCooking to your lineup!
I made this twice. I am giving it 4 stars because of the way it is written here in this recipe, using an avocado. It was very tasty, but I then made it again the next day using the kale, that is what she used on her show (I liked it better, I would have given this recipe 5 stars if it was written with the kale).
Valerie’s Blueberry Smoothie. Great tasting, easy to make and a healthy substitute from what I had been drinking (soda, beer, iced tea etc.). A cooking show is the perfect fit for Valerie. My wife and I record every show (in case we can’t catch it during it’s scheduled time). We will be sampling many of the recipes. Thanks Food Network for producing the show. 5+ stars for Valerie’s Blueberry Smoothie.
Blueberry Smoothie. I have made this a little while ago. I am giving it five stars, even though I think it deserves more. I made it the way Valerie showed it on her show, when I printed the recipe it called for one avocado, she did not use avocado. I also used a whole lime because she used the juice from a whole lime. I did use kale even though the printed recipe calls for “chopped collard greens”. Kale is one of my favorites. Just a note though : why is the printed recipe somewhat different from the one demonstrated on the TV show. Thank you Valerie. I love your show because your recipes use ingredients that you can easily find in the stores and most of the time I do have them at home.
