Ingredients
- 2 white onions, diced
- 6 cloves garlic, minced
- 1 1/2 tablespoons vegetable oil
- 1 smoked turkey wing
- 2 cups chicken stock
- 5 pounds collard greens, cleaned and stems removed
- Salt and pepper
- 1 teaspoon crushed red pepper
- 1/4 cider vinegar
Instructions
- Saute onions and garlic in oil until soft and add turkey wing. Add chicken stock and chopped or torn greens. As greens cook down, add water as needed and season with salt, pepper and crushed red pepper. Cook until tender, about 45 minutes. Serve with vinegar on the side.

Excellent. My partner’s brother ate 4 helpings Thanksgiving day and said they were the best collards he’d ever had. When we split up the leftovers, he shared everything but the greens!
I tried to make Collards a million times and could never get the “pot liquor” right. My family does not eat pork either, but I saw this recipe on FoodTV.com and I followed it to the letter and EVERYONE, co-workers, family and friends raved about how good they were, said it was like “somebody’s grandmother from the south” cooked them! I was so proud of myself and so this is my recipe for greens from now on! Thanks!
