Tequila Turkey Fettuccini

Ingredients

  1. 1-ounce olive oil
  2. 1/4 red onion, cut into strips
  3. 1/2 tablespoon minced jalapeno
  4. 1 tablespoon minced garlic
  5. 5 ounces turkey breast, cooked, sliced
  6. 1-ounce tequila
  7. 4 ounces heavy cream
  8. 1/2-ounce fresh lemon juice
  9. 1 tablespoon chopped cilantro leaves
  10. 9 ounces fettuccini pasta, cooked
  11. 2 tablespoons grated Parmesan
  12. 2 lime wedges, for garnish
  13. 2 sprigs cilantro, for garnish
  14. 2 tablespoons diced Roma tomato, for garnish
  15. 1 teaspoon freshly ground black pepper

Instructions

  1. In saute pan with high heat, add olive oil, onions, jalapeno and saute until translucent. Add garlic and continue to saute for 2 minutes. Add turkey, lightly mix ingredients, careful not to break turkey up to much.
  2. Deglaze pan with tequila, pouring around the edge of the saute pan. Add cream, lemon juice and cilantro. Toss together, then add pasta, and toss ingredients while adding Parmesan cheese.
  3. Nest pasta on plate, pour sauce over pasta. Lay sprigs of cilantro over top, sprinkle tomatoes on top, and crack pepper around the rim of the plate.

I’ve made this many times and it gets rave reviews. An unexpected guest loved it so much she said it was “restaurant worthy.” The serving size is definitely wrong. I double everything except I keep the pasta about 9 oz and it serves 4 hungry people. Get all the ingredients ready though cuz the cooking goes very fast. My husband thinks this dish is “excellent!” Definitely a must try!!

My family loves this dish! I’ve made it several times now and it never fails! If you think this dish is bland you might need to salt the pasta water better. The water should be very salty. If you think there is not enough sauce, you should save some of the pasta water (as you should do with all pasta dishes), and you can put in a ladle or so as needed at the end. Sometimes I put in just a tad more lemon, extra garlic and onion, or I use half and half instead of cream.

I have made this receipe several times, each time I have had a house full of guests that were wowed by this meal. My experience has been to make sure to salt my pasta water well before boiling the noodles, use 3-4 jalepeno’s and a good sized red onion. I never use a whole box of pasta, only the 9oz that I weigh out before boiling it. I made this meal again this week and ate leftovers today for lunch…it was still very good!

We have modified this recipe from the original, and the 5 Stars are based on my modifications.

Here is or modification:
We use a Roasted/Rotisserie Chicken from the store (breasts only
Substitute 2 Habanero Peppers for the Jalapeno. Use one if heat is a concern.
Use a decent quality Tequila.

This recipe, before we modified it was bland. It has since become our absolute favorite, go to recipe, if we want something quick and easy, or are entertaining on short notice. Home run.

I still don’t see why people claim this recipe was “bland,” “no flavor,”- You NEED to use whole, fresh ingredients to get the taste Guy is after. Then you tweek the recipe to your taste using the amount of salt, pepper, and “seasonings” you like. For example, more parmesan for a nuttier, saltier taste; more cilantro for herbier, greener taste; more lemon or lime for tarter (or to cut the heaviness of the cream more jalepeno (or add crushed red pepper for hotter.

Also, regarding the tequila, I add it to the veg Before adding the turkey (or chicken, then flambe, and once the fire has died off, add the rest of the ingredients. The alcohol burns off, all you are left with is a tangy taste. You do NOT need to use a premium tequila, and if you do you are Wasting your money-you don’t taste the subtleties you are paying for in an expensive tequila. I must agree with others that I was a little disappointed with this recipe. Followed it exactly, used all fresh organic ingredients, and it was bland. I think it could be doctored up, however, to be a good recipe. It definitely needs more jalapeno and some added salt. The sauce quantity was not enough for the pasta quantity and that may be why I felt it was a little bland too. Also, make sure you serve this right away for best flavor. We had to prepare it ahead of time and it didn’t do well staying warm & flavorful for our party.

I was so excited to make this, but was not impressed at all. I found it to be a little bland. Followed the recipe to a tee, using only fresh ingredients, but it was lacking salt and heat. If I try it again, I think instead of turkey, some shrimp and chorizo might give it the kick it needs.

This dish is amazing!! Have made this twice in the past week. I used leftover rotisery chicken that I had on hand, and whole grain pasta to up the nutritional value. Other than that pretty much followed the recipe to a T. Using all fresh ingredient in this dish is the key!! Love!!

I just bought Guy’s new book, “Guy Fieri Food”. My first recipe from the book and it was better than I expected. Very flavorful and another level of flavor when you squeeze a little lime juice at the table. My son dubbed it “awesome”. I had my deli person cut a 1/2 inch thick slice of baked turkey for me…it was about 8 ounces. The recipe doubles easily too. Don’t be afraid to double any of the ingredients, i.e., jalapenos, garlic, tequila, etc. This is another notch in my kitchen gun and will be used without a doubt.

I wish I could give this recipe more than 5 stars. I really loved the flavor, I’ve never tasted anything quite like it. For the tequila I used Patron and I also doubled the recipe so there would be enough for 2. It’s also really quick, took me about 20 mins. Most of the time was spent waiting for the water to boil. Next time I make it I’ll use a rotisserie chicken or get pre-cooked meat from the deli. I think that would taste better than the turkey breast I cooked myself.
