Tequila Turkey Fettuccini

Ingredients

  1. 1-ounce olive oil
  2. 1/4 red onion, cut into strips
  3. 1/2 tablespoon minced jalapeno
  4. 1 tablespoon minced garlic
  5. 5 ounces turkey breast, cooked, sliced
  6. 1-ounce tequila
  7. 4 ounces heavy cream
  8. 1/2-ounce fresh lemon juice
  9. 1 tablespoon chopped cilantro leaves
  10. 9 ounces fettuccini pasta, cooked
  11. 2 tablespoons grated Parmesan
  12. 2 lime wedges, for garnish
  13. 2 sprigs cilantro, for garnish
  14. 2 tablespoons diced Roma tomato, for garnish
  15. 1 teaspoon freshly ground black pepper

Instructions

  1. In saute pan with high heat, add olive oil, onions, jalapeno and saute until translucent. Add garlic and continue to saute for 2 minutes. Add turkey, lightly mix ingredients, careful not to break turkey up to much.
  2. Deglaze pan with tequila, pouring around the edge of the saute pan. Add cream, lemon juice and cilantro. Toss together, then add pasta, and toss ingredients while adding Parmesan cheese.
  3. Nest pasta on plate, pour sauce over pasta. Lay sprigs of cilantro over top, sprinkle tomatoes on top, and crack pepper around the rim of the plate.

I read a post where Guy mentioned using chicken or turkey off the bone. But you must use what you have—I baked chicken breast tenderloins with olive oil and cilantro before adding to the sauce. However, I cannot wait to try with bone in poultry. Amazing and easy! I used 1800 tequila great flavor and was a hit with my in laws. Will be a regular recipe for us!
