Ingredients
- 2 tablespoons olive oil
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 pound ground beef (80 percent meat/20 percent fat)
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 2 cups marinara sauce (pick one with personality!)
- One 8.5-ounce bag microwaveable pasta, such as rotini, elbows or penne
- 2 cups shredded Mexican cheese blend
- 2 jalapenos, thinly sliced into rounds
- Greek yogurt or sour cream and sliced scallions, for garnish
Instructions
- Preheat the oven or a grill to 375 degrees F.
- Add the olive oil, chili powder and cumin to a large cast-iron pan over medium heat. Toast and stir until the spices are fragrant, about 2 minutes. Add the beef, salt and a few grinds of black pepper and cook, breaking the beef into bits while browning, until fully cooked, 8 to 10 minutes. Add the marinara sauce and stir to coat. Add the pasta straight from the bag and stir.
- Level the contents of the pan and top with the cheese, then arrange the jalapeno slices around the pan on top. Bake or grill with the lid closed until the cheese melts and is golden on the edges, 10 to 15 minutes. Top with the Greek yogurt and scallions. Serve warm.

Something is missing! Unsure what the missing part is, just doesn’t seem complete. This dish is similar to tacos and nachos in my opinion. I broke up tortilla chips and added shredded romaine. Just not finished!
We make this vegan with Beyond Meat, Violife cheese, and Rao’s Marinara! I also use pickled jalapeños instead of fresh.
My family adores this so much we added it to our recipe rotation. But we double the amount of noodles to make it go further.
We LUV This Recipe. The Flavors are truly On Point! Only adjustments I made were using precooked rice instead of pasta for Gluten-free Option & transferred to baking dish for Oven Portion b/c we don’t have a Cast Iron Skillet. Turned out GREAT ! My 14 & 11yo ate the entire dish with Garden Salad.
Made this many times, one of our favorite quick and easy meals. I do brown and drain meat first then add spices.
So good. I used turkey ground and microwaveable brown rice. I can’t eat regular pasta and didn’t feel like boiling any gluten free pasta. Delicious, quick and easy.
Good easy simple recipe if looking to switch up from the norm. I made recipe exact except boiled box noodles. Only thing I would change next time would be to cook and drain hamburger. It was very greasy. I also like chili powder and cumin so I added a little more than what recipe called for. Recommend to those who are not sure on amount of chili powder…ask yourself…do you like this seasoning if so follow recipe, if not go light on it. You can always hold back at first then add more based on your tastes.
So easy & amazing flavor. It literally takes 15 minutes (if that) to put together and get it in the oven. We’ve already made it many times. Thanks Sunny!
For what it is and how easy it is to make, this was pretty darn delicious. I added some extra spices that I’d normally put in chili—garlic & onion powder, paprika—and it really elevated the flavor. I only had about a cup of marinara left, so I made up the difference with salsa. Lastly, I halved the cheese. This was so incredibly easy and the return on investment was massive. Very delicious, definitely one I’ll keep in my back pocket for a low-effort dinner.
