Spicy Salisbury Cutlets with Sweet Onion Relish

Ingredients

  1. 1 1/2 pounds lean ground beef
  2. 1/2 sweet red pepper, finely chopped
  3. 1/2 green pepper, finely chopped
  4. 1/2 cup dry bread crumbs
  5. 1/4 cup Dijon mustard
  6. 1/2 teaspoon chili powder
  7. 1/2 teaspoon hot pepper flakes
  8. 1/2 teaspoon onion powder
  9. 1/2 teaspoon garlic powder
  10. 1/2 teaspoon paprika
  11. 1/2 teaspoon black pepper
  12. 1/2 teaspoon dried basil
  13. 1/4 teaspoon dried thyme
  14. 1 egg, lightly beaten
  15. 2 tablespoons vegetable oil
  16. 3 red onions, chopped
  17. 1/2 cup apple juice
  18. 2 tablespoons liquid honey

Instructions

  1. In a large mixing bowl, combine the ground beef, red and green peppers, bread crumbs, Dijon mustard, chili powder, hot pepper flakes, onion powder, garlic powder, paprika, black pepper, dried basil, thyme and egg. Mix well. Shape the mixture into 4 patties. In a skillet, heat 1 tablespoon of the oil. Saute Salisbury steaks, about 5 minutes on each side, until golden brown. Remove from pan and keep warm in oven. In the skillet, heat the remaining 1 tablespoon oil. Saute the red onions for 3 minutes. Add the apple juice and honey. Saute until onions are golden brown. Serve relish over Salisbury steaks.
