Ingredients
- 1 tablespoon butter
- 1 green apple, finely chopped
- 1 small onion, finely chopped
- Salt and pepper
- 1 teaspoon fennel seed
- 1 1/2 pounds ground chicken breast
- 1 1/2 teaspoons poultry seasoning, half a palm full
- 1 teaspoon allspice, 1/3 palm full
- 1 teaspoon sweet paprika, 1/3 palm full
- Extra-virgin olive oil, for drizzling
Instructions
- Heat a small nonstick skillet over medium heat. Add butter and melt. Add apples and onions and season with a little salt, pepper and fennel seeds. Gently saute the mixture 5 minutes to soften and remove from heat to cool.
- Heat a griddle pan or large nonstick skillet over medium-high heat.
- Place chicken in a bowl and season with salt and pepper, poultry seasoning, allspice, paprika and a healthy drizzle of extra-virgin olive oil. Add in the apples, onions and fennel and mix the sausage. Score meat into 4 sections and form 3 small, thin patties from each section, 2 1/2 inches across, 12 small patties total. Cook patties 3 to 4 minutes on each side and serve warm.

I’ve been looking for a healthier recipe. My husband loves sausage. We were very eased with the results and the weren’t dry. Had a lot of flavor. Will be adding to my go to recipes
I was surprised that Rachel didn’t use garlic! I doubled the recipe and I put garlic powder in there and a bit more salt.
I used an ice cream scooper due to the mushiness, and mashed them down with the scooper. I also dipped the scooper in water first. Worked beautifully.

Unless you are grinding up you’re own chicken (and who has time for that) everyone knows they sell ground chicken in 1lb packages. So why would you have a recipe with 1 1/2lbs. This is aggravating. Now I have 1/2 of chicken extra or I need to do some funky conversions because I’m increasing your recipe because I have 33% more of the main ingredient. Come on now!
Meh, it was alright. Tasted like mulligatawny without the curry, since it had chicken, onion, thyme, and apple. It was ok, but not what you’d think of when thinking of sausage. Maybe with different spices instead of poultry spice. Probably won’t make again.
My fiancé doesn’t eat pork and really enjoys sausage. Finding this recipe was a godsend because it is very hard to find chicken sausage that isn’t precooked. I’ve made it several times. I ground the apples and onions in a food processor and added the spices there. If I hadn’t doubled the recipe, making it too large to fit in the food processor, I would have just added the chicken there also. The point to the food processor was to spread the onion/apple flavor more evenly and eliminating the chunks of them in the patties. I liked it much better.
These are very tasty and easy to make. I did t have fennel seeds but it still tasted like sausage. Good for extra protein for breakfast.
I felt this was a really good recipe. I have made chicken sausage patties before and this was much better. I did crush the fennel a little bit and added a bit less allspice. Also I added a little cayenne because I couldn’t find my paprika and added extra sage in addition to the poultry seasoning just because our family likes it. If you find the mixture a bit sticky, just slightly wet your hands with water as you form the patties, and as someone else commented, letting it sit in the fridge for 20 or 30 minutes helps as well. I can’t believe anyone said this was dry!! With the sauteeing of the apples/onions/fennel in butter and adding EVOO as well, it was so yummy and moist. I served it with a frittata and it was most definitely a hit!! A lovely breakfast-for-dinner meal.
I’ve been focusing on quality foods and trying to weed out as much processed food as I can. I decided on this recipe and so glad I did!! This is delicious!! All the spices with the apple & onion work perfectly together and made for an awesome breakfast this morning. Next time I’ll be making extras to freeze!
So good I make these often and make larger batches to cook and freeze. It is perfect amount of spice and we make a hotter version too.
I think this does a great of making ground chicken taste good. I ran out of allspice so Isubsituded apple pie spice.
