Every time you make this granola, it turns out delicate, crisp, and delicious. It also comes together fairly quickly. Simply add your preferred nuts, toasted coconut, dried fruits, or other ingredients to make it your own. Just let it simmer a little longer at the end if you like your granola tougher. When using oil instead of butter, the flavor is lighter and more like to the commercial granola you can buy at your local grocery store. Butter will give it a deeper, heavier flavor.

Ingredients
- ¼ cup unsalted butter, melted
- ¼ cup freshly grated Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Kosher salt and freshly ground black pepper, to taste
- 4 zucchini, cut into 1/4-inch rounds
- Reynolds Wrap® Heavy Duty Aluminum Foil
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Preheat a gas or charcoal grill over high heat.
- Whisk together butter, Parmesan, basil, and oregano in a small bowl; season with salt and pepper.
- Divide zucchini among 3 or 4 sheets of foil. Spoon butter mixture over zucchini. Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside.
- Place foil packets on the preheated grill and cook until zucchini is just cooked through, 15 to 20 minutes.
- Garnish with parsley and serve warm.
- Use Reynolds Wrap Heavy Duty Foil packets to ensure the zucchini is flavorful and tender.

I’m lazy so I pam the foil, cut up 3 medium zucchini, coat with an envelope of good seasons Italian salad dressing powder, pour melted butter over the mix and sprinkle parm over and mix, put in foil packets like the recipe says and cook

Mine came out very watery. Not sure what I did wrong but I will not make again.
Although it had good flavor, it was still watery which always seems to be the problem with zucchini. I guess I was expecting even a little more firm or crispy has others have stated. We even varied the time each of the 3 packets stayed on the grill.
These were so good.. be careful when grilling them though some of ours got crispy.. but for me it was perfect. I love a little crisp to my food.. You can experiment with this recipe too, we will try different seasonings but this is spot on in flavor for sure!
Mine didn’t come out as pretty as the picture but they were delicious. I will definitely be using this recipe again in the future.
