Vegan Baked Carrots

Ingredients

  1. 1 pound young carrots, preferably with their green tops
  2. 3 tablespoons olive oil
  3. 2 tablespoons orange juice
  4. 1 tablespoon cumin seeds
  5. sea salt and freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Scrub carrots and peel, if desired. Place carrots on a piece of parchment paper large enough to create a packet.
  3. Mix olive oil, orange juice, and cumin seeds in a small bowl. Pour mixture over carrots and toss well. Fold parchment paper over carrots and seal to close.
  4. Bake in the preheated oven until carrots are soft, about 45 minutes.
  5. You can use aluminum foil instead of parchment paper, if you prefer.
