Ingredients
- 4 sweet potatoes, peeled and cut into 1 1/2-inch thick rounds
- ⅓ cup fresh thyme leaves
- 3 tablespoons olive oil
- 4 large garlic cloves, minced
- ½ teaspoon kosher salt
- ½ teaspoon red pepper flakes
Instructions
- Preheat oven to 450 degrees F (230 degrees C).
- Combine sweet potatoes, thyme, olive oil, garlic, salt, and red pepper flakes in a bowl until evenly coated. Arrange coated sweet potato slices in a single layer on a rimmed baking sheet or 9×13-inch baking dish.
- Place baking sheet on the top rack of preheated oven; roast until sweet potatoes are tender and slightly browned, about 40 minutes.

I’ve made this twice in a week. I love how they sweet potatoes caramelize and the subtle combo of flavors is perfect. I use my toaster oven, and cook at 425. I’m hoping to make this at Thanksgiving.
I’ve made this several times because it is quick, easy, and popular in my household. In the absence of fresh thyme I usually substitute about 1 1/2 tsp of dried, or whatever tastes good that day!

This was very good. I didn’t have fresh thyme because this was a spur of the moment side dish but dried thyme was very good as it softened in the oil. I didn’t cut the slices as thick which we really preferred. Super easy and definitely will make again . My hubs thought it was delicious. So simple and easy to put together.

Not a fan of the sweet type of sweet potato dishes. So, this was right up my alley! Husband loved it as well. The only change I made was using dried crushed thyme, preserved from last summer’s herb plantings. Will definitely make again! Thanks for the recipe.
After we made this we tried this with rosemary and garlic instead of the thyme (because we had a surplus of rosemary and no thyme) and it was amazing!

I didn’t have thyme so I used parsley. I would recommend flipping them half way through cooking so they don’t burn.
These were very tasty. I will definitely make these again. I did have a problem with baking time as at the 35 minute mark, I smelled burning. Oops! I am at high altitude so this may have been the reason (?) so next time I will bake at 30 minutes instead of 40 minutes or just adjust the temperature. Even with the blackened bottoms (my family forgave that) we all liked the way they tasted.

the garlic and thyme combo was delicious, but I really wasn’t expecting it to be so filling! I had 8 ready for a side dish for 3 people, and we couldn’t finish it! It was really delicious though, I will definitely make this amazing recipe again!
