I was never fond of Tater Tot® casseroles, but this recipe looked interesting. I’m glad I tried it, because it’s excellent. I sauteed some chopped onions with the ground beef, and added some seasoned salt and Penzy’s California Pepper. Instead of the tots, I used potato “crowns”. I thought two soups and a can of evaporated milk would make it soupy, but it was fine. Definitely use a cup of shredded cheese on top.

The recipe states the cheese is optional but I feel it is necessary and more of it. I ended up adding double the amount in the end. While the taste was okay, the corn did not belong or at least not a whole can. I also found it odd to use cream of chicken with the ground beef so I used cream of celery instead. This was just okay for us and I blame it on the corn.
