Our friends gave us two big zucchinis, which served as the inspiration for this recipe. They were too big when cut in half to fit in my large casserole dish for lasagna. After reading a number of various recipes, I decided to experiment with a different version of my stuffed bell pepper recipe, and the outcome was delicious. The 4 and 8 year old granddaughters want more. Simply leave out the meat to make this dish vegetarian.

Ingredients
- 5 sweet potatoes, peeled and sliced
- ½ cup packed brown sugar
- ¼ cup reduced-fat margarine
- 3 tablespoons orange juice
- 1 pinch ground cinnamon
- 1 (10.5 ounce) package miniature marshmallows
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook until tender, about 15 minutes. Remove from the heat, drain, and mash.
- Place mashed sweet potatoes in a large bowl. Add brown sugar, margarine, orange juice, and cinnamon; mix with an electric mixer until blended. Spread evenly into a 9×13-inch baking dish. Sprinkle marshmallows over top.
- Bake in the preheated oven until casserole is heated through and marshmallows are puffed and golden brown, 25 to 30 minutes.

I made 2 slight changes and it was awesome. I used canned yams instead of fresh sweet potatoes and also I used pumpkin pie spice in place of the cinnamon. It was definitely a hit!!
As a complete clutz in the kitchen with baking experience limited to Salmon fillets & foil-wrapped taters, it would be impossible to understate my culinary skill. Nevertheless I managed to comply with the recipes’ instructions, and though I required substantially more time than indicated, I succeeded in baking a delicious surprise for wifey. I forgot the marshmallows, so I sprinkled some brown sugar over the smoothed surface before almost 30 minutes in the oven. I covered the dish with foil & allowed it to cool. It has a delightful taste that summons fine memories. In that I offered an earnest prayer beforehand, almost certainly my success was due to massive Divine assistance. Purdy sure I’ll be doing this again. And again. Please accept my gratitude. And that of my wife.
I added large marshmallows. The egg, flour and vanilla made a big difference to plain yams with butter. Yummy

This was delicious. We dont care for mashing the potatoes, left them in bite size pieces. After reviewing the ratings, I went ahead and added a little more brown sugar. Will be saving this recipe as a favorite.

Very good recipe, although it needs a bit more brown sugar than the recipe calls for. I also went with two pinches of cinnamon. I realize it is subjective but the change I mentioned made it perfect IMHO.
These sweet potatoes were so good . These have so much flavor. Everyone loved them for Thanksgiving. Can’t wait to make these again. May add some nutmeg and pecans too! Loved them

Good recipe, but try switching crushed pineapple for OJ to get a really decadent dish.

This recipe will make you like sweet potato casserole! The OJ really gives it a fresh taste and makes the flavors pop! I also used Penzey’s cinnamon which is a game changer!
