Ingredients
- 4 ounces bacon, cut into 1-inch pieces
- ½ large yellow onion, chopped
- ½ bulb fennel, chopped
- 1 sweet potato, cut into small cubes
- ½ jalapeno pepper, seeded and minced
- ¼ cup whiskey (such as Jack Daniel’s®)
- ¼ cup brown sugar
- salt and ground black pepper to taste
Instructions
- Place bacon in a large skillet and cook over medium-high heat until evenly browned, about 10 minutes. Remove bacon from skillet with slotted spoon to a plate lined with paper towel, retaining drippings in the skillet.
- Reduce heat to medium. Cook and stir onion and fennel in hot bacon drippings until golden brown, about 10 minutes. Add sweet potato, place a cover on the skillet, and cook until sweet potato is tender and slightly browned, about 10 minutes.
- Increase heat to medium-high. Pour whiskey into the skillet and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Stir bacon in the vegetable mixture. Add brown sugar and stir to incorporate. Reduce heat to medium; cook and stir until the whiskey has been absorbed and the liquid is caramel-colored, about 5 minutes. Season with salt and pepper.

OUTSTANDING! Made it exactly as written and it was so deeply flavorful. Caramelized veggies with the gorgeous sauce cooked down to a syrup – YUM There must be a myriad of ideas to use this technique (bourbon and brown sugar) including chicken, ham, shrimp and a other root veggies. I LOVE THIS RECIPE!
I substituted real maple syrup for the brown sugar and poblanos instead of jalapeños. The measurement for whisky was problematic as the chef kept sipping it. Be especially careful and have your lid at the ready to avoid a flash fire when adding whisky….’bout burned the house down!

I thought there was way too much bacon fat for only 1 sweet potato, and would use 2 next time. The jalapeno, seeded and minced is in the ingredients, but it doesn’t tell you where to add it in the cooking. There should be a warning about adding whiskey to a hot pan, because when I added it, it boiled and overflowed and CAUGHT FIRE on my stove. I found the flavor to be too heavy with all that bacon fat, and would use much less next time.
Loved it. But i used it as a dinner side, for Christmas dinner.
Need to include 3 red garnett sweet potatoes, double the onion, a jigger more whisky and double the jalapeno, and leave out the brown sugar
This recipe would be great with significantly less sugar. We could only eat a few bites because it was so sugary. Additionally, the recipe lists a jalapeno pepper, but the instructions never tell you when to add the pepper. I will probably try this recipe again, but with modifications.
Very good, but next time I will double the jalapeno.
It was easy to make, I think it was a bit of the sweet side. Next time I will reduce the amount of brown sugar I used.

This was absolutely delicious! Followed the recipe exactly. The jalapeño gives it a nice warmth without being overbearing. Will definitely make again.
Pretty good. Followed the directions except I halved the sugar. Good thing, wouldn’t have wanted it any sweeter. Though I don’t care for heat much, I would make again with twice the jalapeno next time.
The flavor was great but I felt the onion and fennel got too brown by time sweet potatoes were done. Next time I will try cooking them for less time before adding the potatoes.
Sooooo good. My husband hates sweet potatoes and he ate seconds. I substituted half a red pepper for Jalapeno and used red pepper flakes to add heat instead. Yum yum!
Amazing!! Served as a side to scrambled eggs, but ready to try again with sausage or chicken. My fennel bulb was small so I used the whole thing and added more sweet potato (about 20 oz. peeled/cubed). Forgot the jalapeño. It was so good, but I can see where a little zing might compliment the sweetness. Will add it next time.
Not a bad recipe but the brown sugar, whiskey, and bacon completely overpowered the flavor of the sweet potatoes. To me it tasted similar to baked beans with bacon, and that’s not what I was looking for.

Used cider in the recipe instead of whiskey. Came out delicious. Will mane again and again.
Followed directions but I made it without a jalapeño pepper and I doubled the sweet potato portion and it came out great!
