These spicy, delicious, warm stuffed tomatoes are a pleasure.

Ingredients

  1. 2 large ripe tomatoes
  2. 1 (10 ounce) can diced tomatoes with green chile peppers, partially drained
  3. ½ cup dry bread crumbs
  4. ⅔ cup shredded Cheddar cheese, divided
  5. ¼ pound smoked sausage, cut into 1 inch pieces

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Cut the tops off tomatoes and use a knife to cut around the inside, separating the flesh from the skin. Scoop out flesh. Place tomatoes in a small baking dish.
  3. Combine canned tomatoes with bread crumbs, and 1/3 cup of cheese in a small bowl. Stir in sausage; mix well. Spoon the mixture into tomato skins and top with remaining 1/3 cup of cheese.
  4. Bake in preheated oven for 15 minutes.

Made the mistake of using a too spicy canned diced tomatoes—but they were still very good and easy to make. Next time I’ll use a really mild flavored brand.

Truth be told, I think this is a five star recipe. My hubs is just not too crazy about stuffed tomatoes, so….4 *. Our end of season glean was too small to preserve and needed to be eaten. This recipe did the trick. I did use the scooped out tomatoes (chopped up) and a half can of chopped green chilis instead of the Rotel, but that was because I couldn’t see wasting that beautiful fruit. Yummy!

I used ground beef onions whole grain rice and some spices … I also just used the inside of the tomato diced up and did not use the canned tomatoes … I used a jabenero and Monterey Jack mixture on top with a side of garlic bread

I regret having to give this simple recipe a poor review. There is no texture. There is almost no flavor. Of the three people I made this for none asked for seconds and two said I should not make it again. Apologies, this is just not worth making.

These stuffed tomatoes are delicious. I used andouille sausage and instead of the canned tomatoes, I used the scooped out pulp. I drained the pulp of excess liquid. I cooked at 400 for about 20 minutes and then turned the oven to 350 and cooked for another 10 minutes. This is definitely a ” do again”.

So good! Use the insides of the tomato with peppers rather than the canned rotel and this would be 5 stars! I have made this with or without the sausage and both are delish!! Thanks for the idea. So good. I even tried them with grits and bacon inside. So many ways to jump start a great idea.

I was looking for a new recipe to use up some tomatoes that were going bad and I would definitely make these again. The recipe is a great base and can easily be adjusted to what you want to use up or have on hand. I used sweet Italian sausage with Gouda cheese, omitted the breadcrumbs, added onions and the insides of the tomatoes. Mmm!
