An excellent way to utilize any of the surplus kale you may have in your yard! Spinach, mustard greens, and arugula are all acceptable substitutes for the other similar greens called for in this recipe. A variety of greens is also very beneficial. Serve with rice as a salad, a side dish, or a main dish.

Ingredients
- 3 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup bread crumbs
- 3 bunches kale – washed, dried, and shredded
Instructions
- Heat oil over medium-high heat in a large frying pan. Add onions and garlic; cook and stir until soft.
- Mix in breadcrumbs, and cook and stir until brown.
- Stir in kale, and cook until wilted. Serve hot or warm.

Yes, I used Coconut oil, and added red & Green Bell peppers, onions, tomatoes, nosalt ,and stevia for a little sweetness. But I did keep the oregano, and basil from the original recipe.
We both thought this recipe was delicious. It took about 10′ to stir fry after cutting up the onions, garlic and kale. I will make it again.
Super good tasting. Not too hard using a food processor. A little messy to prepare. Quick to make. My husband liked it too.

I make this at least once a month, such a tasty little side OR a main dish if you want. I make it exactly according to the recipe, but I do add a little fresh parmesan after plating it. I do that with almost anything though. Love this recipe.

I’ve never been a big fan of kale, but I tried this recipe for lunch today and LOVED it! I’m limiting carbs, so I used parmesan cheese instead of breadcrumbs–delish! (So much so that I plan to make it again for dinner tonight!)
I wasn’t that crazy over this and I was pretty excited about it! I made the alterations suggested by adding bread crumbs last and tossing in a bit of water. I also subbed a mix of spinach and kale, but when I tried it, it was just slimy and bland. I probably added double the amount of spices called for!
This is really good. Scaled down for just the two of us, added about 3 Tbs Parm to the bread crumbs (after the crumb were cooked). Did as others suggested, and set aside the cooked crumbs before cooking the kale. I also sliced 3 thin slices of a good hard salami into very thin match stick-size and fried them (after the bread crumbs), and added them to the set-aside crumbs. With the kale a little damp (not wet), I tore the leaves off the stalk, and gave them a medium chop. With the pan fairly hot, I added a bit of butter, then the damp kale, and put the lid on and turn down the heat. When the kale was nice and wilted, I added a tsp of balsamic vinegar (didn’t have lemon), tossed, then tossed all together – crumbs, kale, and salami sticks. The bread crumb mixture gave it a nice crunch! Will definitely do this again.

First adventure into kale – really liked this! As per other commenters, I cooked onions and garlic first, cooked kale with a little bit of left over chicken broth, and added lemon juice. Definitely making again!
