Ingredients

  1. 2 tablespoons butter
  2. 1 large onion, chopped
  3. 2 (3 ounce) packages pancetta bacon, finely chopped
  4. 5 large potatoes, peeled and thinly sliced
  5. salt and pepper to taste
  6. 1 (10 ounce) package frozen chopped spinach, thawed and drained
  7. 4 cups shredded Mexican cheese blend
  8. 1 pint heavy cream

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  2. Melt the butter in a skillet over medium heat, and saute the onion and pancetta until onion is tender and pancetta is cooked through.
  3. Alternately layer the potato slices, salt and pepper, pancetta and onion mixture, spinach, and cheese in the prepared baking dish. Pour the heavy cream over all.
  4. Cover, and bake 1 hour in the preheated oven. Uncover, and continue baking 30 minutes, until bubbly and lightly browned.

I used bacon and I precooked the potatoes. It was really tasty but I really needed more spinach and I did t have cream which would have made it more tasty. Good recipe

Loved, loved, loved this. I was on my 500 calories day and was only going to have 1/12 of it but that got cancelled. It is very rich, so due to dietary requirements will cut down the cheese and cream content by a third. It will still be delicious. Because some people said their potatoes were not cooked enough I steamed the sliced potatoes so cut down my cooking time to 45 minutes covered and 15 uncovered. Was completely cooked. Again to cut calorie count, I will steam the onion with the sliced potatoes instead of cooking in 2 tab butter. I am sure it will make no difference taste wise. Hubby just tried it and gave it a 10 – nothing usually gets a 10 with him. We ate it as a lunch meal instead of a side dish, which would be perfect. Thank you so much for this recipe.

I made this before and used chopped broccoli in place of the spinach and it was fine. I think it’s tastier with the broccoli.

This dish is so tasty I almost couldn’t stop myself from overeating. It contains two of my favorite foods–spinach and cheese–so naturally, when looking for a potato dish I gravitated to this recipe. I did, however, make a few small changes: I used unsalted butter, but omitted pancetta bacon and salt altogether, instead replacing those ingredients with finely chopped carrots (which I sautéed with onions), nutmeg and thyme. I also used fresh spinach, which I chopped. The dish was so good my friends, who are vegetarians, couldn’t stop complimenting me and asked for the recipe of course. I’m not a major potato fan–except when its French fries–so this will be my healthy potato alternative from now on.

Thanks for sharing a very good recipe! This is an excellent side dish and would be perfect for a potluck. I lightened it a little by skipping the butter and used half and half instead of the heavy cream and it was still delicious.

Had a bunch of taters to use up, so I tried this. Substituted leftover turkey for the pancetta but otherwise made it as described. Turned out great, family loved it, will definitely make again.

Holy cow took forever to make but worth ever minute spent. Due to lack of options at the grocer sub’d hickory smoked bacon for the pancetta bacon and used fresh spinach. Great flavor and texture can’t wait to make it again.

Considering my homey ate half the pan of this tonight I’m gonna day an instant winner. I did not use the bacon (didn’t have it) and used fresh spinach not frozen I cooked (was given 5 lbs of spinach to use up from my mom). Used milk mixed with butter to dump on it and added chives one top.

Used red and white small potatoes, added thyme, tarragon, garlic, smoked paprika and red pepper flakes. Used fresh spinach; threw in after onion sautéed. Used cheddar cheese. This was fabulous. I only changed the recipe a little as I used what I have on hand and I love adding herbs.

I had fresh spinach instead of frozen and just washed it and layered it in. I used regular bacon instead of pancetta. I also messed up and missed covering it for the first hour, so I covered it for the last half hour instead. I plan on trying this again but I think I’ll cook the spinach with the onion and bacon next time, and cut back on the cream a bit (might also use all or part plain yogurt and milk instead for a slightly healthier take). Any issues I had with the dish were my own doing except that I had WAY more potato than needed (even when I increased how much I put in each layer).

Delicious! We are vegetarian so I made it without the pancetta, and I had fresh spinach so I used that and added some garlic. It came out great, and I feel like it’s an easy recipe to modify according to what’s on hand – some chopped sauteed bell peppers would be good, mushrooms, etc. Will definitely make again.

Great way to use spinach! I used fresh spinach, didn’t measure it just used enough to cover layers and made it without meat. Tasted great! Used plenty of cheese and for heavy cream used half 2%milk , half cottage cheese and threw in 1 egg. Will definitely make again. Would be great by adding spaghetti sauce for a noodle less lasagna!

While this was good I don’t think I will make it again. There’s too many changes that I would have to do to make it suitable for my family. For some reason, we just weren’t ‘turned on’ by these flavors combined together. Good start however and thanks for sharing.

To save time, I left the skin on the potatoes, used fresh spinach and more cheese as my family really loves cheese. I also added 2 eggs to help congeal the milk. It was fabulous!

I followed the the recipe exactly. I thinly sliced 6 potatoes just in case, but found that it was way too much for the medium sized baking dish I used. I also found that the potatoes were still a little bit “el dente” after the 1 hr 30 min. cooking time. I would cook it for about 15 minutes more next time. It was still absolutely delicious!! Don’t change the recipe at all – perfect as is. Will definitely make again!
