Ingredients

  1. 1 pound bacon
  2. 1 large head cabbage, chopped
  3. 1 large onion, chopped
  4. 1 (8 ounce) package sliced fresh mushrooms
  5. salt and ground black pepper to taste

Instructions

  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels; crumble when cooled. Drain all but 3 tablespoons of bacon drippings from skillet.
  2. Cook and stir cabbage, onion, and mushrooms in the remaining bacon drippings until tender and lightly browned, about 20 minutes. Fold bacon into cabbage mixture. Season with salt and black pepper.

Great sweep the fridge recipe! I used two medium onions, Two packages of mushrooms, half of a green cabbage, a bundle of leeks, last of the garlic jar. At the end I added a 1/4 cup of Karen Birmingham red wine to help cook off the cabbage and leeks. Left out the bacon of sausage since I didn’t have any. Served with ground pepper from Savory Spice in CO. Salt free dish. Spouse approves, and had leftovers for her lunch at work. Cooked on the side burner of my grill, in Grandmother’s extra-large frying pan. Covered until veggies were tender and turned to prevent scorching.

Well, for all the people griping about a pound of bacon, I used TWO pounds because the bacon we like is super thick. I followed the ingredients as suggested by the recipe but I did add some garlic to taste. I’m both stuffed and delighted with the dish.

I liked this dish alot! I did add a couple ingredients to the recipe. I added Cajun season and some garlic powder to make it a little more tasty! I used it as a main dish but it would go very well with perogies or dumplings as well!

This was delish! Made it according to directions. Only thing I would do next time is buy a bag of shredded cabbage. SO good!

I used half of the bacon and cabbage, the rest as stated and it was delicious. The next day I fried thinly sliced potatoes and then added the left overs until warm, another delight! Then again I rarely eat bacon so I could not stop and I did not care about calories etc. I figure this might be a once a year treat!!

I used THICK CUT bacon, so a pound really wasn’t as much as the very thin cut bacon would be. I’ve used hickory smoked and applewood, both made a subtle but yummy differences. I want to try pepper bacon next. Oh and instead of white sugar to crisp the bacon (as per tips) I used maple sugar! YUMM!!!

I made the dish mainly as written and I thought it was very tasty. I used bacon ends which turned out to have mostly fat. Next time I will use whole bacon strips so that it can provide more of a crunch.
