Carrots, celery, onions, and quinoa are used in this flavorful and straightforward savory quinoa meal. I don’t like chunky vegetables, therefore I always chop my vegetables very, very finely, almost like mincing. Making this minor cuts is optional. With rice, this probably also tastes fantastic.

Ingredients
- 2 tablespoons olive oil
- 1 stalk celery, finely chopped
- 2 carrots, sliced
- 1 small onion, minced
- 1 clove garlic, minced
- 1 cup vegetable stock
- ½ cup uncooked quinoa, rinsed
- ¼ teaspoon dried basil
- 1 teaspoon ground turmeric
- 1 teaspoon lime juice
- salt to taste
Instructions
- Heat olive oil in a saucepan over medium heat. Stir in celery, carrots, onion, and garlic. Cook and stir until onion has softened and turned translucent, about 5 minutes.
- Stir in vegetable stock, quinoa, basil, and turmeric. Bring to a simmer, then reduce heat to low. Cover and simmer until quinoa is tender and liquid is absorbed, 25 to 30 minutes.
- Stir in lime juice and season with salt.

Easy to make but nothing special. I recommend additional seasoning for some more flavor.
I made this single serving size and made several adjustments based on others’ recommendations and a need for speed. 2.5 Tbsp quinoa, 1/2 Tbsp oil,1/3 stock celery, no carrot, 1/2tsp onion powder, 1/8 tsp each cumin, turmeric, garlic powder and salt, pinch of basil, 1/3 cup vegetable stock. Cooked celery in oil for 5 minutes, then mixed in quinoa, spices and broth; brought to boil then simmered covered 15 minutes, stirring once; removed from heat and stirred then let sit with lid on for 10 minutes. Serve. My picky eater said she would eat it again.
The recipe turned out great and tasted wonderful the first time. Another time I prepared the recipe up until the final simmering. I placed it in a casserole and put it in an oven at 200f and stirred the casserole and served it at a pot luck 2 hours later. It worked great.
I love this the next morning heated or not with greek yogurt. A new staple. I added aleppo pepper (spice) and chia seeds (fiber) per a friend’s recipe.

I used chicken broth and served it with roasted chicken. It was very tasty. I will definitely make it again.

Loved this savory side dish. Especially good with baked chicken. Quick, and easy prep. Great size for just two but will double when serving more. Looking forward to trying as a main dish with Italian lamb sausage added.

This is a lovely recipe to taste and admire visually. I found it easy to make and prepare it regularly. I use three tricolor carrots (purple, yellow, orange) to add more color and flavor variety and tricolor quinoa. I use a bit more than a teaspoon of turmeric, but that’s my preference. The lime juice is essential to brighten the flavors. I find this quinoa goes better with meats that aren’t overly complicated. I also enjoy this as a lunch salad.
Very tasty! I made this without the basil and lime juice as I didn’t have any on hand and used rosemary and lemon juice instead. I packed it for lunch to have at work and really enjoyed it. I will make this again using the proper ingredients it’s a nice way to dress up quinoa. Thank you for the recipe.

I will be making this again, again… and again. I boiled some collard greens with onion and garlic on the side, drained and added to my serving. Tumeric really gives it a nice flavor with the lime/ lemon. Added some white pepper for a kick of spice. Delicious.
VERY tasty. This is a great recipe even if you don’t have all the ingredients on hand. I didn’t have vegetable stock so substituted water, didn’t have dried basil or turmeric or lime juice, so added a dash of cumin, oregano, and pepper for seasoning. It was delicious, I didn’t want to stop eating.

Ok, maybe it’s because I was pretty hungry, but this was quite delicious without alterations! Easy too!
I liked this and used a little less than the tsp of Turmeric because other reviews thought it was to much. It’s a strong flavor for me so I might just use 1/2 a tsp next time. I used lemon juice instead and bumped it up to 1 tblsp because I couldn’t taste 1 tsp. I also added peas that I took out of the sugar snap peas that I had on hand. I added these at the same time I added the quinoa.
I cut the turmeric and oil in half and added 1/4 tsp of cumin. I also used chicken stock rather than vegetable. I loved it! Fairly quick and easy to make!
