Sauteed Spinach with a Twist

What could be sexier than a quick supper that doesn’t heat up the home, require a lot of unusual ingredients, or involve a lot of cleanup? This meatloaf is cooked in an air fryer and is spicy, saucy, and luscious. A tasty and delicate meatloaf may be on the table in less than an hour, but more significantly, with very little work. Include mashed potatoes in the dish.

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 2 bunches fresh spinach, trimmed
  3. 3 tablespoons low-sodium chicken broth
  4. ¼ cup golden raisins
  5. 1 teaspoon garlic powder
  6. freshly ground black pepper to taste
  7. 2 teaspoons freshly shredded Parmesan cheese

Instructions

  1. Heat olive oil in a saucepan over medium heat; add spinach and turn using tongs, until coated with oil. Cook, while turning, until just wilted, about 4 minutes. Add chicken broth, golden raisins, garlic powder, black pepper, and Parmesan cheese. Cook and stir spinach mixture until cheese is melted and raisins are plump, 1 to 2 minutes.

I made the recipe as written, except that I subbed dark raisins for the golden raisins, because that’s what I had. We loved it. I will make this over and over. Thank you!

I added red pepper flakes and topped it with extra cheese. I thought it was interesting, different and tasty but the rest of the family picked out the raisins. Being the only one that liked it, I doubt that I will make it again. Thanks for sharing your recipe.
