Small potatoes that have been roasted with za’atar seasoning are flavorful and have a crunchy exterior.

Ingredients

  1. nonstick aluminum foil
  2. 1 (1.5 pound) package small creamer potatoes (such as The Little Potato Company® dynamic duo potatoes)
  3. 2 tablespoons olive oil
  4. 2 tablespoons za’atar seasoning
  5. ½ teaspoon salt
  6. 1 teaspoon chopped fresh parsley

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  2. Place potatoes in a large bowl. Add olive oil, za’atar, and salt; stir to coat. Spread potatoes in a single layer on the prepared baking sheet.
  3. Roast in the preheated oven for 12 minutes. Stir potatoes and roast for an additional 12 minutes. Stir once more and cook until crispy, about 4 more minutes. Garnish with parsley.

I must admit I went way “off the reservation” with this by combining this recipe with Chef John’s “Special Roasted Potatoes” HOWEVER, I have never tried Za’atar (Zaatar) as I have never heard of it. This stuff in ‘killer’! I cut russets in ‘planks’ and drizzled with olive oil, etc. Then I continued with this recipe. Holy Smoke!! Thanks Nicole for broadening my spice horizon. (FWIW In Corvallis, OR South Town there is a middle-eastern market that sells this called ‘Bazaar International Market’.)
