Roasted Pumpkin with Root Vegetables and Broccoli

Your two favorite indulgences will take on a new flavor when cookie dough and decadent chocolate brownies are combined. Since there are no eggs in the uncooked cookie dough, you can indulge without worry. Simply ignore the calorie count. I developed the recipe using my mother’s brownie recipe, which she has been using for decades.

Ingredients

  1. non-stick cooking spray
  2. 1 pound fresh pumpkin, peeled and cut into 1-inch chunks
  3. 1 head broccoli, cut into small pieces
  4. 1 red beet, peeled and cut into 1-inch chunks
  5. 1 sweet onion, chopped
  6. 1 sweet potato, cut into 1-inch chunks
  7. 1 red potato, cut into 1-inch chunks
  8. 3 tablespoons olive oil
  9. 2 tablespoons balsamic vinegar
  10. 2 tablespoons honey
  11. 1 tablespoon minced garlic, or more to taste
  12. 2 teaspoons ground black pepper
  13. 1 teaspoon ground cloves
  14. ½ teaspoon ground allspice
  15. ½ teaspoon sea salt

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Prepared a baking sheet with non-stick cooking spray.
  2. Combine pumpkin, broccoli, beet, onion, sweet potato, and red potato in a large bowl.
  3. Whisk olive oil, balsamic vinegar, honey, garlic, pepper, cloves, allspice, and sea salt together in a small bowl; pour over the vegetable mixture and toss to coat. Spread onto prepared baking sheet in a single layer.
  4. Bake in preheated oven until all vegetables are tender, about 35 minutes.

Great recipe. I didn’t have all spice so I used cinnamon and cumin. Also turned out great! .

Tried this tonight – didn’t use all the specified veggis – varied a bit based what we had at home (carrots, potatoes, onion with the pumpkin), however the spices and other ingredients were the same and was loved by all in the family.
