Roasted Garlic Romano Butter (Spaghetti Warehouse Copycat)

Family members love to make this around the holidays. Compared to the typical green bean casserole, it is an improvement. It tastes amazing and is quite simple to make.

Ingredients

  1. ½ cup butter, at room temperature
  2. 3 cloves roasted garlic, mashed, or more to taste
  3. 2 tablespoons milk
  4. 7 teaspoons grated Romano cheese
  5. 1 ½ teaspoons dried parsley, crushed

Instructions

  1. Mix butter and garlic together in the bowl of a stand mixer. Beat milk into butter mixture using the whisk attachment on the mixer until smooth and whipped. Add Romano cheese and parsley to butter mixture and beat until thoroughly whipped.
  2. The flavor develops if you let it sit for a little while before serving.
  3. To roast garlic: cut the top 1/2 inch off of a head of garlic and place it in a pan. Drizzle the exposed tops with olive oil, then cover with aluminum foil and bake in an oven at 350 degrees F (177 degrees C) for approximately 40 minutes. The garlic should be easily mashed with a fork. Use a sharp paring knife to remove cloves from the skins.
  4. You can use a food processor to blend butter and garlic if you wish to make it smooth.

overall taste – 5/5, it’s definitely a tasty spread, no doubt there. regarding similarity to spaghetti warehouse’s butter flavor, i would say 4/5. please note, i did add a squirt of lemon juice because the recipe as-is just doesn’t have that slightly sour/acidic bite like i find at SH. next time, i will do buttermilk instead of regular milk because i think that would be the perfect amount of ‘tang’ IMO. either way, i’d use this as a guideline and try it out to taste for yourself if you love SH but don’t have access!

The butter tastes ok, but was not anything like spaghetti warehouse butter. In addition, directions should be added on how to roast the garlic. 10 minutes is not an accurate representation of how long it will take to make.

Just what I was looking for! I think I gained 5 pounds the week I made the first batch. Served easily with Pillsbury french bread.
