Rice Cooker Black Beans

For those of us low-carb people who enjoy pretending that we are eating mashed potatoes, here is a recipe for mashed cauliflower. Adding butter is optional.

Prep Time: 5 mins
Cook Time: 2 hrs
Additional Time: 4 hrs 5 mins
Total Time: 6 hrs 10 mins
Servings: 4
Yield: 2 cups cooked black beans

Ingredients

  1. 1 cup dried black beans
  2. 3 cups water, or more as needed

Instructions

  1. Place black beans and cover with 3 cups water. Let sit for 5 minutes. Discard anything that floats to the surface. Drain.
  2. Cover black beans with 3 more cups water. Let soak, 4 hours to overnight. Drain.
  3. Combine drained beans and 3 cups water in a rice cooker. Cook on the “Porridge” setting, adding more water if needed, until tender, about 2 hours. Drain.

This is a great recipe. I love using rice cooker. Beans came out perfect!

Very easy and a great way to use a rice cooker. I would prefer to cook the beans with some seasonings. One tip I use, if you want the beans to hold their shape, soak them in salted water, drain / rinse and then cook them. The beans will still get soft but not fall apart or turn mushy.
