Ingredients

  1. 2 (14 ounce) cans chicken broth
  2. 2 medium potatoes, peeled and cut into 1-inch cubes
  3. ½ (1 ounce) package ranch dressing mix

Instructions

  1. Bring chicken broth to a boil in a large pot. Add potatoes, reduce heat to medium-low, and simmer until tender, 15 to 20 minutes. Drain.
  2. Beat potatoes with an electric mixer until smooth. Mix in dressing mix.

This was a nice change from everyday ordinary mashed potatoes. The broth added a lot of flavor and the ranch was a nice touch. I do recommend reserving some of the broth. I ended up having to add some of it back for the ranch powder to “dissolve”. I really liked that this one doesn’t call for milk and we didn’t miss it.
