Pecan meal is used in these meatballs to substitute the meat. They are so delicious that you barely even miss the meat! Since this recipe contains cheese and eggs, it is not entirely vegan. However, such things can be replaced to make it so. Despite the odd seeming ingredients, the end product is fantastic! The sauce has a lot of zest, so if you don’t want it to be overpowering, cut back on the vinegar a little.

Ingredients
- ⅓ cup ramps leaves, rinsed and dried
- 2 sticks unsalted butter, at room temperature
- salt to taste
Instructions
- Chop 1/2 of the ramp leaves coarsely and the other 1/2 very fine.
- Beat butter with an electric mixer in a bowl until creamy. Mix in ramps and season with salt to taste. Transfer compound butter into a dish and refrigerate until hard.
