When you want something light yet full, chicken and rice, which are not typically included in stracciatella, add a little amount of depth.

Ingredients

  1. 1 tablespoon butter
  2. 1 cup uncooked quinoa
  3. 2 cups vegetable broth
  4. 2 teaspoons chopped garlic
  5. 2 tablespoons chopped fresh parsley
  6. ½ tablespoon chopped fresh thyme
  7. ¼ teaspoon salt
  8. 1 small onion, finely chopped
  9. 1 dash fresh lemon juice (Optional)

Instructions

  1. Melt butter in a saucepan over medium heat. Add quinoa and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth and bring to a boil. Reduce the heat, cover, and simmer until tender, about 15 minutes.
  2. Remove from the heat and transfer to a bowl. Stir in garlic, parsley, thyme, salt, and onion until combined. Sprinkle lemon juice over top.

I like this one a lot. I have a friend for whom I sometimes cook who’s glucose-intolerant, so I’m always looking for non-wheat options. Quinoa is sorta a dull food in general, but this recipe gives it some heft and flavor that I appreciate. I had others ask me for the recipe afterwards. Not a standout but pretty darn good.

Made as is! For the love of all things chocolate, do NOT sauté anything. The raw flavors is what makes this quinoa so tasty! I wasn’t sure how I would like it, but I was totally surprised. Just make this one as is, it’s pretty yummy with no modifications.

Excellent simple recipe. I changed a couple of things. I sautéd the onions in butter and olive oil for about five minutes before adding in and toasting the quinoa. I used fresh basil and cilantro and lime juice rather than lemon juice. Very tasty.

This was really good. I didn’t use thyme, and did what a few others did – I sautéed the onions, garlic and mushrooms and put aside to add to the quinoa at the end. It was really delicious and a good intro for us to quinoa. Will def make again.
