This gives the traditional eggplant Parmesan a little twist. By peeling and cooking the eggplant, you may get rid of its bitterness. The panko bread crumbs give the crust some great crunch. Such good freezing!

Solid techniques. I didn’t use garlic salt; I don’t own it, and you shouldn’t either. It tastes like something made by DuPont. Use a couple decent-sized cloves of fresh garlic, it’s worth the time to mince or crush them. All of two minutes. Cook in the oil until soft and lightly golden, but do not brown, then add the spinach. With real parmesan or pecorino, and some freshly cracked pepper, this can be a revelation.
When I make this, I use equal amounts of earth balance vegan butter and olive oil, 4 cloves of garlic-smashed and roughly chopped and rinsed baby spinach. Heat the oil and butter over med high heat in a dutch oven, sauté the garlic and add the still damp spinach and toss spinach until the desired doneness. I use a whole clamshell of spinach from Costco. Everyone loves it, even meat eaters!
I made this using an 11 ounce box of washed baby spinach leaves. I used a 6 quart kettle, and added two tablespoons of butter a generous sprinkling of garlic salt (but no where near the amount called for), and some freshly ground mixed black pepper. I used maybe a generous tablespoon of parmesan cheese. It made two adult size portions of spinach and was very tasty. If you want to stretch this out to 4 servings, you would need some sides, or a large portion of a main dish. But, it was a lot tastier than plain boiled spinach.
I sautéed fresh garlic in the olive oil until fragrant, add spinach, salt to taste, add cheese.
I think this recipe would have been 5 stars, but the garlic salt is way too much. I only used 3/4t and that was too much. Next time I will use a 1/4t and then taste. I should have known better, but we live and we learn.
I would not add any garlic salt, I would add garlic Powder less sodium in this product. I little mesquite seasoning or liquid smoke.
So easy and quick. The last thing you cook for a larger meal since it takes almost no time and is totally reliable. Bag baby spinach works well.
My favorite cooked spinach recipe that I have tried on Allrecipes. I used butter and Mrs. Dash garlic and herbs seasoning. I used less cooking time, probably 7 minutes total. Delicious!

I liked the simplicity of this recipe. It uses ingredients I have readily on hand and it is easy and fast. However, there is way too much salt! The flavors were overtaken by it! I will try is again but will use fresh garlic cloves or garlic powder and 1 teaspoon salt. Since I loved the basic qualities and believe reducing the salt will make it the perfect side, I’m giving it 4 stars.
It was easy and delicious! I am lactose intolerant sadly, so I had to use nutritional yeast in place of parmesan. I also did the salt and garlic powder separate to adjust as per my taste.

What I like about this dish is it is simple an tasty. I modified slightly and first added one large clove of fresh minced garlic to the olive oil for a minute or so before adding the spinach. I also don’t like the spinach over cooked so I only saute for 6 minutes or so. I use kosher salt because it is less salty.
I prefer a little butter. Also added a little lemon when served
I must have read the salt incorrectly. 1 1/2 teaspoons? It was so salty I couldn’t eat it.
Super easy and healthy way to get lots of spinach in my non veggie eating husband. Wish I would have taken the time to read the reviews as the garlic salt was wayyyy overboard on the salt, he didn’t mind and said it killed the spinach taste, but almost ruined a great dish for me. Next time, I’ll follow the masses and opt for fresh garlic and skip the large amount of salt.
