Ingredients

  1. 2 (8.5 ounce) packages dry corn muffin mix (such as Jiffy®)
  2. 1 teaspoon salt
  3. 1 teaspoon garlic powder
  4. 1 teaspoon onion powder
  5. ½ teaspoon ground black pepper
  6. ½ teaspoon cayenne pepper
  7. 3 eggs
  8. 1 (5 ounce) can evaporated milk
  9. 1 (14.75 ounce) can cream-style corn
  10. 1 quart vegetable oil for frying, or as needed
  11. 1 pinch salt to taste

Instructions

  1. Mix corn muffin mix, salt, garlic powder, onion powder, black pepper, and cayenne pepper in a bowl until blended.
  2. Stir eggs and evaporated milk into dry ingredients until moistened.
  3. Stir cream-style corn into mixture to make a moist batter. Let batter stand while oil heats.
  4. Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  5. Gently drop a teaspoon of batter at a time into the hot oil, staying as close to the oil as possible to avoid splattering. Fry hush puppies until golden brown, about 3 minutes per batch.
  6. Remove hush puppies with a slotted spoon and place on a paper towel-lined plate to drain. Sprinkle with salt if desired.
  7. This recipe is written for the Jiffy(R) corn muffin mix, which is very sweet. If you use another brand the balance of flavors will be off and you will likely need to adjust the seasonings.
  8. If the hush puppies are not done enough, you can put them in the microwave for 30 seconds to finish them.

Needed more flour, too soupy.

It was way to soupy I made this exactly as the recipe said. I added one more box of jiffy mix so I had 3 boxes in it and it was still to soupy but close they started to hold together a little better. My suggestion is some how drain some of the cream corn are not as much.

So I had to adjust the recipe a bit. When I followed the recipe it was too runny. I had to add flour to thicken it up to get it to deep fry and stay together. I couldn’t really get them to stay together into balls, they came out kind of flat lol. Nonetheless they taste amazing!! This is a really good recipe and we will most definitely be making them again!!

Great recipe to use with full size green tomato’s. Just substitute diced green tomato’s for creamed corn!

Great recipe. One box of Jiffy mix, one large egg, milk just to moisten, 1/2 can of creamed corn, up to 1 cup of flour to thicken were my adjustments. I got about 20 hush puppies

They were easy to make but I had a difficult time keeping them in a ball shape when cooking the hush puppies. Even though some of them looked more like cooked mushrooms they were very tasty. ??

The batter was WAY too runny. I got very few balls of dough. Most of it hit the oil and fell apart. Tasted good but lots of little pieces of dough.

Following he recipe exactly left me with a very loose, soupy batter. I had to add almost whole cup of flour, which threw off the seasoning and left me with very bland results. Also, using jiffy mix and canned corn made for very sweet hush puppies, which isn’t really to my liking.

The corn really makes this recipe! My kids were eating them as fast as I could make ’em! I did alter it just a bit since I do not use mixes, hence I grabbed my fav cornbread recipe and just mixed up the dry ingredients, which included 1/4 c. sugar. From there, I followed this, except that I also omitted the cayenne. I used melted coconut oil to take the guilt out of frying. Tasted great! Will be making this again!

These were amazing! Neither myself nor my husb care for hush puppies but we loved these that we made to go with our fish fry. Guests loved them too. Because others said the batter was too runny (and it was), I left out an egg (I used 2 large ones) and used 1/2 c. milk. I added flour till it was the right consistency, about 1 to 1-1/2 c. I will make these again even if I am not having a fish fry! This made quite a few using a small cookie scoop and cooked up to golf ball sized. You could easily half the recipe.

Yum! Loved these but you definitely want to follow review suggestions to add flour and double the spices. You probably also want to half the recipe unless you’re making for a crowd; this yields a ton! I fried mine in coconut oil for a healthier alternative and they were delicious.
