Perfect White Rice

On the stovetop, one can create delightfully fluffy white rice. Rice grains are kept distinct by first sautéing the rice. It is crucial to keep the pot covered the entire cooking period to capture the steam required to cook the rice properly. The rice can finish cooking in the remaining steam for the final five minutes of cooking without the bottom burning.

Ingredients

  1. 2 teaspoons unsalted butter
  2. 1 cup uncooked long-grain white rice
  3. 2 cups water
  4. ½ teaspoon salt

Instructions

  1. Melt butter in a medium saucepan over medium heat. Add rice and stir to coat. Cook until rice grains begin to turn opaque, 1 to 2 minutes; do not brown. Add water and salt.
  2. Bring to a boil; reduce heat to low. Cover and let simmer for 15 minutes. Do not lift the lid.
  3. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork before serving.
  4. If you wish to double this, use just 3 3/4 cups water.
  5. For a more flavorful side dish, I use broth or stock instead of water and any herbs or seasonings that complement the entrée.
