Ingredients
- ⅓ pound trimmed fresh green beans
- 5 tablespoons smooth peanut butter
- 1 teaspoon brown sugar
- ½ teaspoon soy sauce
- ⅓ cup chopped peanuts
- 1 teaspoon miso paste (Optional)
Instructions
- Bring a large pot of lightly salted water to a boil. Add the green beans and cook uncovered until tender, about 3 minutes. Drain in a colander and immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the green beans are cold, drain well and cut into 2-inch pieces.
- While the green beans are cooking, stir together the peanut butter, sugar, soy sauce, peanuts, and miso paste in a mixing bowl. Once the green beans have been cut, stir into the peanut sauce and serve.

Unbalanced recipe that I don’t think can be fixed. Find a really good peanut sauce recipe and use that instead. This recipe is nothing but sweetened peanut butter on bland green beans. Skip it.
My children didn’t like this at all.
Unless you really love peanut butter (and I mean like my puppy!) and really DON’T like the taste of green beans, you will probably not like this as is. You might as well just get out a jar of peanut butter and shove the green beans in it. It overwhelmed any other ingredients. I added more soy sauce, I added more miso paste, I then tries resorting to tons of fresh grated ginger, then cayenne, but I did not care for this recipe. Maybe it’s just me but….
