Panko-Parmesan Roasted Broccoli

Ingredients

  1. 2 heads broccoli, cut into florets
  2. ⅓ cup panko bread crumbs
  3. 2 tablespoons olive oil
  4. 1 teaspoon garlic powder
  5. 1 teaspoon lemon zest
  6. ½ teaspoon kosher salt
  7. ¼ teaspoon ground black pepper
  8. ⅛ teaspoon red pepper flakes
  9. 1 tablespoon lemon juice
  10. ¼ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Line a large rimmed baking sheet with foil.
  2. Toss broccoli, bread crumbs, olive oil, garlic powder, lemon zest, salt, black pepper, and pepper flakes on the prepared baking sheet.
  3. Roast in the preheated oven for 10 minutes. Toss broccoli and continue to roast until golden brown around the edges and slightly crisp, but not mushy, about 10 more minutes.
  4. Remove from the oven. Immediately drizzle with lemon juice, then sprinkle with Parmesan cheese and serve.
  5. Using red pepper flakes is optional.

I thought the recipe was pretty good overall. However I changed it up a little bit. I used Asparagus instead of Broccoli and left the lemon zest and juice out. My family really liked it. I might have to try this with the Broccoli next time.

The panko bread crumbs burned. I have a similar recipe for roasted broccoli without bread crumbs and it’s much better.
