Ingredients
- ½ pound carrots, peeled and cut into 3-inch-long pieces
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- ¼ cup chopped pecans
- ¼ cup panko bread crumbs
Instructions
- Preheat the oven to 425 degrees F (220 degrees C).
- Toss carrots with olive oil and Italian seasoning in a bowl and spread out on a rimmed baking sheet.
- Roast in the preheated oven for 15 minutes. Sprinkle pecans and panko on top and continue roasting until golden, about 5 minutes more. Serve immediately.

I enjoyed these simple carrots with my holiday dinner. My cousin advised these were the first cooked carrots she’s ever eaten and liked! It had a great flavor and crunch but it felt like it was missing something to take it over the top. If I figure out what that is, I will update this comment!
Easy and flavorful, but something wasn’t quite right with the panko bread crumbs. Maybe I’ll mix the panko and pecans together in a little olive oil…. not sure.
Made this with Christmas dinner and New Years Day it was a hit both times with family.
Overall this was quite a nice dish. I think the oven temp could have been reduced a but, but it could be due to the rather small size of the carrots. The oven roasting does release the sugars in the carrots, and they are surprisingly sweet.
Great tasting. We will add the nuts next time.
