Oven-Baked Parsley Red Potatoes

Grilled cheese and buffalo chicken with blue cheese and pepper jack! Melted cheese, buttery, crunchy bread, and the spiciness of the buffalo sauce combine to form a filling sandwich.

Ingredients

  1. ½ cup butter, cubed
  2. 2 pounds red potatoes, cut in half
  3. 1 tablespoon minced onion, or to taste
  4. 2 tablespoons minced fresh parsley
  5. ½ teaspoon salt
  6. ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Place butter into a large baking dish and set in the oven while preheating.
  2. Remove the baking dish from the oven. Add potatoes and onion and toss until thoroughly coated with butter; this will give them a nicely browned and slightly crisp coating.
  3. Bake in the preheated oven until potatoes are tender, about 40 minutes. Remove from the oven and sprinkle with parsley, salt, and pepper. Toss until well coated.
  4. These potatoes can be cooked in the oven alongside meat, just add more time if cooking at a lower temperature. They can also be made ahead of time and just reheated without losing flavor or texture. They also freeze well.

I made this. But I also added whole boneless chicken breasts. Soy sauce and minced garlic with vegetables. Covered with aluminum foil and baked for an hour.

My family begs me to make this every time we have a big dinner together! I do double all the ingredients except of course the potatoes. If you want to make more potatoes then adjust the ingrediants as well. I double the rest of the ingrediants because it gives the potatoes just the right flavoring!
