This easy fish rub gives Whole30 cod fillets a delicious flavor. The fillets should marinade in the rub for at least a couple hours or even overnight. Serve cod with the side dishes of your choice, such as cooked rice, quinoa, cauliflower rice, or your preferred veggie.

Ingredients
- 1 cup extra-virgin olive oil
- 2 cloves garlic, minced
- ¼ teaspoon dried oregano
- 1 pinch salt, or to taste
- 1 pinch dried rosemary, or to taste
- 1 pinch dried basil, or to taste
- ground black pepper to taste
Instructions
- Combine the olive oil, garlic, oregano, salt, rosemary, basil, and pepper in a skillet over medium heat; cook until the garlic begins to sizzle, about 5 minutes. Remove immediately from heat.
- This recipe is also great as a cooking oil, but please slice garlic in half instead of mincing and remove it after it begins to sizzle, or it will burn. The garlic is only used to infuse the oil and if used for cooking purposes should be removed prior to cooking the entree.

Tastes wonderful and was very easy to make. It tastes just like our favorite Italian restaurant’s and was just what I was looking for to dip my home-baked herb bread into.
I used Italian seasoning, a robust olive oil and didn’t heat it! It was great!
OMG — OUTSTANDING!! I took a Short Cut @ the 3rd time I made it and I use ‘Italian’ Seasoning now. 1/2 Cup of Olive Oil, 1 Heaping TBSP of Minced Garlic, 1 tsp of Italian Seasoning, Salt & Pepper. I use it on homemade Breads, Rolls and found a wonderful discovery — I marinade my Veggies in it then skewer it up for the BBQ. My Husband doesn’t really like Veggies but requests these OFTEN!! Love that!! Our Grown Up Son & Daughter loved them too 🙂
