Okra, Corn and Tomatoes

Campbell’s mushroom soup makes it simple to put together this creamy, cheesy broccoli casserole. As a side dish or a vegetarian main entrée, serve it.

Ingredients

  1. 2 slices bacon, chopped
  2. 1 medium onion, chopped
  3. 1 (10 ounce) package frozen cut okra
  4. 1 (14.5 ounce) can diced tomatoes, drained
  5. 1 (20 ounce) package frozen corn
  6. 1 tablespoon file powder
  7. salt and pepper to taste

Instructions

  1. Place bacon in a large skillet over medium-high heat. Cook and stir to release some of the juices, then add the onion and okra. Fry until tender and browned, stirring constantly. Be careful, as this tends to brown quickly.
  2. Pour in the tomatoes, and simmer over medium heat for 20 minutes. Mix in the corn, and simmer for another 10 minutes. Season with file powder, salt and pepper, and serve.

I’ve made this a dozen times. I used turkey bacon. And I still don’t know what file powder is. But it’s excellent every time!

I fry 4 slices of bacon until crispy, then remove from the pan. Fry the onion in the bacon fat until it starts to soften, then add okra(I use fresh). Then add the corn (fresh again). Finish with the file powder, 1 tbsp. Worcestershire, and Louisiana hot sauce to taste . Add the tomatoes and simmer. Sprinkle with the crumbled bacon and serve. A family favorite !

My mom always make this. It was one of my favorite meals. You dont have to use file. Thats what people use to make gumbo. Its usually in the seasoning section.

Leave out the bacon – really does not need pig grease to be good. I used all fresh veggies, real tomatoes (not canned), corn cut off the cob, and fresh okra. Add red pepper flakes and a can of tomato sauce. No added salt either- there’s plenty in the canned sauce. Now *that’s* a healthy recipe.

I’ve been making this most of my life. I live in the Southwest now where okra is a rarity (except at buffets, and it’s always fried). We went to a You Pick Em farm and I was in okra heaven! No file powder, I put in a little beef bullion. Serve over rice! Yummy!

Very good. It has a nice mix of flavors. I will reduce the FIle to 1/2 tablespoon next time. There will certainly be a next time. I served it as a side dish with the Cuban-Style Pork and Sweet Potatoes recipe for a very delicious dinner.

I always follow a recipe exactly as written when I make it for the first time. That being said, this dish was absolutely delicious and everyone enjoyed the dish. The family was asking for more, but I did not make enough. This dish will definitely be in the family meals rotation in the future.

This is such a great southern classic. I used all fresh vegetables, since everything is ready in the garden at the same time. So good! . Add some hot corn bread and put on your elastic waist pants!
